Vegan Brunch
1. Savory Lentil Crepes
Lentil is a high-protein food. Include them in your diet. This is one of the simple and easy recipes you can try for brunch. You can make them with soaked lentils or lentil powder. Also, add any vegetable of choice to the crepes. High in protein and fiber keeps you full for longer.
2. Chickpea Omelette
Chickpea flour is the best alternative for eggs. These chickpea flour omelets are too good and filling too. This is easy to make and takes less than 30 minutes to make serving for 4 - 6. Stuff sauteed veggies for a filling healthy brunch. This is also high in protein.
3. Banana Oatmeal
Banana oatmeal is another healthy yet yummy dish you can make for brunch. Add peanut butter, or chocolate sauce and enjoy a sweet-filled breakfast. Quickest breakfast you can make with a healthy grain like oatmeal.

5. Cracked Wheat Porridge
This is another protein-rich brunch that will keep you full for longer. Broken wheat or cracked wheat is cooked to a porridge consistency and with lots of veggies to make it healthier. And this is not only healthy but tasty as well. Must try this bulgur wheat recipe.
6. Whole Wheat Banana Pancakes
These are my favorites. A sweet and chocolaty start to a day. And that also with healthier whole wheat flour instead of all-purpose flour. So these are much healthier than traditional flour pancakes. Excellent for kids as well. It's an easy, quick, and hassle-free vegan brunch. This will definitely keep you full for longer.
7. Potato Soft Tacos
To start a day with potatoes is also a good idea for weekends. Potato has a bad reputation as being an unhealthy vegetable. But that's not true at all. Being a nutrition specialist I always mentioned this is equally healthy when taken in moderation. The only thing if you are on a low-carb diet, you need to avoid this vegetable. Other than high carbs this has many more essential nutrients in it. Well, I love these potato tacos with my air fryer Mexican potatoes.
8. Air Fryer Roasted Vegetables
What else can be a healthier start to a day!! Grab a bowl full of these healthier roasted veggies or pair it up as a side. Or add some dressings or crema and wrap in a tortilla for a filling vegan brunch.
9. Vegetable Hash Breakfast - Vegan Brunch
One more healthy dish for your brunch table menu. Serve them with toast, wrap, and naan, or add to a burrito bowl. These are yummy, delicious, healthy meatless vegetable stir-fry. Check similar breakfast potatoes.
10. Vegan Potato Pancakes
Vegan potato pancakes or vegan latkes are so easy to make and delicious. And you don't need eggs to make the pancakes delicious.
11. Healthy Bean Salad - Vegan Brunch
Try this healthy bean corn salad or Southwestern salad with creamy avocado crema. This is too delicious and yummy salad recipe where you don't need to do any preparation or cooking.
12. Quinoa Roasted Veggies Salad
Quinoa salad with roasted vegetables and a tahini sauce is what makes a quick and healthy brunch for weekends or lazy mornings.
13. Vegan Baked Oatmeal With Peanut Butter
These baked oatmeal are perfect for breakfast. You can make them for a week and store them properly. You can also add your favorite flavors like blueberry, nuts, and raisins, any other fruits can also be good in baked oatmeal.
14. Potato Sandwiches
If you are a potato lover and love spicy you can't skip this potato sandwich. It's flavorful, delicious, and takes a few minutes to make. Spicy potatoes are stuffed along with a spicy cilantro spread and then toasted to crispy. These are too good and delicious. And you can skip the spicy sauce if you don't like much heat in your food.
15. Creamy Cajun Pasta
This creamy cajun pasta is a great option for brunch. This is easy to make and takes really lesser time (less than 20 minutes). To make it healthier, add your favorite veggies to the pasta. This pasta doesn't need any cheese and yet it's yummy with tons of simple flavors.
16. Veggies Loaded Ramen Noodle Stirfry
This is my all-time favorite. Load it with veggies and add this delicious ramen stir-fry to your menu. It's too easy and quick to make. Takes less than 30 minutes altogether. These are kids-friendly too.
17. Mushroom Spaghetti Pasta
Another popular recipe here. This is simple spaghetti pasta with mushrooms. This is like mushroom Aglio olio. And trust me these are equally great in taste. Easy to make and takes less than 15 minutes to make.

Make these easy eggplant meatballs in the air fryer and serve them over spaghetti with marinara sauce.
