These crispy roasted are anytime healthier than fried potatoes. The real flavor comes from the blend of spices that we use in Mexican cuisine (Mexican dishes). These Mexican-inspired potatoes are a great side dish in fact.
These Mexican potatoes are vegan and gluten-free. However, if you are vegetarian, can sprinkle some parmesan cheese over them. This is one of the simplest recipes and doesn't require a lot of preparation. It's a simple dish made with simple pantry ingredients.

Potatoes - any potatoes will be okay for this. However, the best potatoes will be the less starchy potatoes. I love to make them with baby potatoes. You can simply make it with any potatoes like russet potatoes, Yukon golds, baby red potatoes, or yellow potatoes.
Olive oil - or canola oil or avocado oil or any vegetable oil. This helps crisp up the potatoes.
Spices - Cumin powder, coriander, smoked paprika, cayenne pepper, garlic powder, onion powder, chili powder, oregano, salt & black pepper. Substitute with taco seasoning.
How to make crispy Mexican potatoes?
This is a simple recipe and can be made both in the oven or in the air fryer. In both ways, you don't need to precook or boil the potatoes. Let us see both the method to make the delicious Mexican potatoes.
Preparation
Cut potatoes into halves or into quarters depending on the size of the potatoes. Then wash the potatoes to get rid of excess starch. In a bowl soak the potatoes in cold water for 15 - 20 minutes. This will help in removing the starch and making the potatoes crispy.
After 15 - 20 minutes, remove the potatoes from the water and wipe them dry with help of paper towels.
Now add the seasonings to the potatoes and toss them to mix.
Oven-baked
Preheat the oven to a high temperature like 400 F. Now grease a large baking sheet and line it with parchment paper. Then place the potatoes on the tray and spread them evenly without overcrowding the tray.
Bake them for 20 minutes and then remove the tray and toss the potatoes. Bake for another 20 minutes till the potatoes are crispy and golden brown.
Once done remove from the oven and toss the roasted potatoes with some fresh herbs. I love to add fresh and finely chopped cilantro leaves or parsley to the crispy potatoes.
Air Fryer Mexican Potatoes
Preheat the air fryer to 400 F for 3 minutes. Place the seasoned potatoes in a single layer and cook for 15 minutes. Don't forget to toss them halfway through.
Remove the potatoes and toss with fresh herbs. Serve them hot. Cooking time may vary by 2 - 3 minutes depending on the doneness you need and the type of the potatoes.
