Mexican potatoes are delicious roasted potatoes that are flavored with spices. This makes a great side dish too. You can make the Mexican-style roasted potatoes in the oven or in the air fryer.
Cut potatoes into halves or into quarters depending on the size of the potatoes.
Then wash the potatoes to get rid of excess starch.
In a bowl soak the potatoes in cold water for 15 - 20 minutes.
After 15 - 20 minutes, remove the potatoes from the water and wipe them dry with help of paper towels.
Now add the seasonings to the potatoes and toss them to mix.
Bake in the Oven
Preheat the oven to a high temperature like 400 F.
Now grease a large baking sheet and line it with parchment paper.
Then place the potatoes on the tray and spread them evenly without overcrowding the tray.
Bake them for 20 minutes and then remove the tray and toss the potatoes. Bake for another 10 minutes till the potatoes are crispy and golden brown.
Once done remove from the oven and toss the roasted potatoes with some fresh herbs.
In the air fryer
Preheat the air fryer to 400 F for 3 minutes.
Place the seasoned potatoes in a single layer and cook for 10 - 12 minutes. Don't forget to toss them halfway through.
Remove the potatoes and toss with fresh herbs. Serve them hot.
Note - Cooking time may vary by 2 - 3 minutes depending on the doneness you need and the type of the potatoes.
