    Mushroom Spaghetti (Mushroom Aglio Olio)

    Mushroom Spaghetti or Mushroom Aglio Olio is one of the easiest vegan mushroom pasta. This is not a creamy mushroom pasta but this is so flavorful and delicious pasta bursting with garlic flavors and crunchy mushroom bites.

    Mushroom Spaghetti Pasta

    Mushroom Spaghetti with olive oil and garlic is the ultimate comfort food even for weeknights. It won't take more than 15 - 20 minutes for the whole process. If you don't have any veggies in your pantry, make this spaghetti Aglio olio. Sauteed mushrooms add crunchy bite to the spaghetti.

    This mushroom pasta is vegan and plant-based. However, if you don't follow the vegan diet, then you can add parmesan cheese to your pasta while serving. Also, check out my spaghetti aglio olio recipe.

    Ingredients you will need -

    Spaghetti pasta - Take thin pasta for a flavor-infused pasta as it will be easier to absorb the flavors

    Mushroom - Take any of the mushroom varieties available to you. Here I have taken bottom mushrooms for this recipe. Oyster mushrooms work great too.

    Garlic - Add them generously to your pasta. This adds a major strong garlicky flavor and makes the dish delicious.

    Olive oil - This is one of the main ingredients in spaghetti aglio olio. Here the name olio means olive oil. This means spaghetti cooked in olive oil.

    Parsley, chili flakes - Parsley leaves and chilli flakes add additional flavor to the pasta recipe. You can control the number of chilli flakes depending on the spicy spaghetti you can have.

    How to Cook Pasta Perfectly?

    Pasta is native to Italy and Italian cuisine. If you love pasta and make them often, you must know few facts about it. You must know few facts about ITALIAN RULES.

    Firstly, The Spaghetti Rule - You should never break the pasta for cooking. Cook them intact as they are. Secondly, Never overcook the pasta. Cook them al dente (just cooked). And that's all.

    Take water in a large soup pot. Bring it to a boil and add salt generously. This is important too since adding salt in this stage helps. Add the pasta/ spaghetti and cook for 5 - 6 minutes or till it's cooked al dente. Also, the cooking time depends on the size and type of pasta too.

    How to make mushroom spaghetti aglio alio?

    Cook Spaghetti Pasta -

    To cook the pasta heat water in a large pot and bring it to boil. add salt generously (abt 1 tbsp in 1 ltr water). Then add spaghetti pasta to the boiling water. While the base will become softer it will immerse completely in water.

    Keep boiling at high heat for 5 - 7 minutes or till it's cooked al dente. Reserve 1/2 cup pasta cooking water from the pasta pot. It will add further flavor to the Aglio olio.

    Once done, remove from hot water through a colander. Wash it with water to stop overcooking. Drizzle some olive oil to avoid getting dry pasta.

    Saute Mushrooms -

    In a skillet or pan, heat oil. Add sliced mushrooms. Saute for 4 - 5 minutes or till it looks brownish. Season with a pinch of salt and pepper. Remove from oil when done.

    On the same pan, add little oil if required. Otherwise, add a generous amount of garlic to the oil and saute till it starts to change color. Add chopped parsley and chili flakes. Adjust the quantity of flakes depending on how spicy you want your pasta to be. Saute for 1 minute.

    Next, add the reserved pasta water and the sauteed mushroom. Bring it to a boil and simmer for a minute till all water is absorbed nicely. Immediately add the pasta and stir nicely. Adding starchy pasta water helps to keep the spaghetti moist and also adds a nice flavor to the whole dish. It's important.

    Add some more chopped parsley and serve the mushroom spaghetti aglio olio hot.

    Ingredients
      

    • 1 cup sliced mushrooms 1 lb/ 400 gms
    • spaghetti pasta
    • 4 - 5 tbsp olive oil
    • 8 - 10 garlic cloves
    • 1/2 cup finely chopped cilantro leaves plus more for garnish
    • 1 tbsp chilli flakes or as per taste
    • 3 - 4 cups water to boil pasta
    • 1 tbsp salt as per taste
    • 1/2 tsp black pepper optional

    Instructions
     

    Cook Spaghetti

    • Heat water in a large pot and bring it to boil.

    • Then add spaghetti pasta to the boiling water.
