This includes a lot of dishes, starting from tacos, pancakes, baked oats, rich cakes and fritters, breakfast tostadas, vegan frittatas, vegan quiche, easy waffles, pancakes vegan sweet, or savory crepes, healthy vegetable hash, breakfast potatoes, or veggies hash.     Lentil is a high-protein food. Include them in your diet. This is one of the simple and easy recipes you can try for brunch. You can make them with soaked lentils or lentil powder. Also, add any vegetable of choice to the crepes. High in protein and fiber keeps you full for longer.

    These are my favorites. A sweet and chocolaty start to a day. And that also with healthier whole wheat flour instead of all-purpose flour. So these are much healthier than traditional flour pancakes. Excellent for kids as well. It's an easy, quick, and hassle-free vegan brunch. This will definitely keep you full for longer.

    7. Potato Soft Tacos

    To start a day with potatoes is also a good idea for weekends. Potato has a bad reputation as being an unhealthy vegetable. But that's not true at all. Being a nutrition specialist I always mentioned this is equally healthy when taken in moderation. The only thing if you are on a low-carb diet, you need to avoid this vegetable. Other than high carbs this has many more essential nutrients in it. Well, I love these potato tacos with my air fryer Mexican potatoes.

    What else can be a healthier start to a day!! Grab a bowl full of these healthier roasted veggies or pair it up as a side. Or add some dressings or crema and wrap in a tortilla for a filling vegan brunch.
