Cantaloupe gazpacho soup is summer special cold melon soup or cold cantaloupe soup. Though it's almost similar to famous Spanish Gazpacho Soup but here tomatoes are replaced with melons. This is a fruity, soothing and refreshing soup for the hot summers.
In summers, the sunny days and hot humid weather, we need food that is cooling and soothing for our body. Otherwise, our bodies may get dehydrated. So watery and juicy fruits and vegetables are always the best to hydrate us.

Why cantaloupe or muskmelon is good in summers?
Cantaloupe or muskmelon has high water content just like watermelon. So it takes care of fluid loss of our body and keeps us hydrated fully during sunny days. You can simply make juice out of it or eat as fruit only. The best time to eat this melon is morning and afternoon. One should avoid taking melons after the evening as that will create digestive disorder.

Cantaloupe is a great source of beta carotene, vitamin C, A, potassium, folic acid. this has high fiber as well. It has other essential vitamins and essential nutrients. Hence it has numerous health benefits also apart from hydrating our body.

Summer Special Cantaloupe Gazpacho Soup
I love authentic gazpacho soup and any other cold summer soup. I have made mango gazpacho & watermelon gazpacho this month. Also in sted of sweet, these are basically savory. My muskmelon gazpacho has a spicy flavor from Thai red hot chilies. You can also add jalapeno to the soup.
Add refreshing herbs like mint leaves, basil leaves to your summer soup for a refreshing flavor. You may also add cilantro leaves. The other herb that goes excellent with any gazpacho soup is basil leaves.
Ingredients for Cantaloupe Gazpacho Soup
This summer soup doesn't require a long list of ingredients. Only a few cooling and refreshing veggies and basic seasoning. And that's enough.
The basic ingredients are cantaloupe, cucumber, bell peppers, onion, chili. For seasoning, I have taken red wine vinegar, salt, and pepper. If you don't have red wine vinegar or balsamic vinegar, then simple lemon juice will also do well. Just pulse all ingredients and a delicious summer soup recipe is ready.

Equipment
Ingredients
- 1 large melon chopped into pieces
- 1 cucumber
- 1/2 yellow bell pepper or green bell pepper.
- 1/2 medium onion
- 2 red chilli or jalapeno
- 2 sprigs mint leaves
- salt to taste
- 1/2 tsp black pepper
- 1 tbsp red wine vinegar
- 3 tbsp olive oil
Instructions
- In a blender or food processor, gring all ingredients (musk melon, cucumber, onion, bell peppers, red chillies, mint leaves) till a smooth puree.
- Season with salt and pepper.
- Drizzle the olive oil and give a nice stir.
- Gazpacho soup is ready to serve.
