This summer try this awesome cooling watermelon feta salad with refreshing cucumber and mint. This healthy summer salad not only soothes but also helps to keeps us hydrated to beat the heat of summers.

This watermelon feta salad requires no recipe in fact. This is a simple 5-minute salad recipe that is perfect for summers. You don't need to spend hours in kitchen cooking meals. At the same time, the high water ingredients keep you hydrated and cool the body in heat of the day.

The key ingredients are watermelon and cucumber which has 90% water content and recommended for the summer season to beat the heat and humidity. Additionally, you can add onions, herbs of your choice. Mint leaves goes exceptionally well with watermelons.
Here I have added cilantro leaves, dill leaves, mint leaves. The mint leaves add refreshing flavor to the whole salad. Only mint leaves will be enough.
Even if you want to make your watermelon feta salad without cucumber and onions. Only watermelon, feta, mint will be enough for your salad. However, cucumber adds additional benefits in summers.
Seasoning For Watermelon Feta Salad
You need a mild salad dressing. Plain citrus-based dressing is just awesome. I'm using red wine vinegar. If you don't have this vinegar then try with a tbsp of lemon juice along with olive oil, salt, and pepper. No other dressing required for this cooling summer salad.
Feta cheese gives it that creaminess. However, if you are vegan then take vegan feta cheese for this recipe.
Simple seasoning, healthy fruits and delicious taste in just 5 minutes. This is happiness for me (at least in summers).

Watermelon Feta Salad (Summer Salad)
Equipment
- Knife
Ingredients
- 8 cups watermelon or 1 large (chopped & deseeded)
- 1 cucumber Chopped
- 1 onion
- 2 sprigs mint leaves
- 1/2 cup feta cheese chop into cubes or crumble
- 2 tbsp cilantro leaves finely chopped (optional)
- 1 tbsp dill leaves finely chopped (optional)
Salad Dressing
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- salt to taste
- 1 tsp Black Pepper Powder
- 1 tsp Lemon Juice
Instructions
- In a mixing bowl add chopped & deseeded watermelon, cucumber, onion, herbs.
- In a small bowl, add olive oil, wine, lemon juice, salt, and pepper.
- Give it a nice stir.
- Add the dressing to the mixing bowl of watermelon.
- Give it a gentle stir.
- On top add pieces or crumbled feta and some more mint leaves.
