Spanish Gazpacho Soup
This Gazpacho Soup authentically belongs to Spanish cuisine. We usually cook and serve it piping hot when we talk about soup. But the specialty of this soup is that it is not cooked and served chilled.
Normally, it's the raw puree of tomato, cucumber, and bell pepper combined with a few more herbs and spices, such as onion, garlic, jalapeno, and coriander/ mint leaves.
Add balsamic vinegar, red wine vinegar, malt vinegar, and lemon for tanginess. Olive oil and salt are added at the end. This is pureed to a fine paste. Sprinkle freshly crushed black pepper for heat.
To make this thicker, add less water while grinding. Also, add 1 - 2 slices of bread to make the soup thicker and filling.
Blend these healthy vegetables together to a puree, refrigerate for a few hours, and serve cold. This soup is keto-friendly, full of fiber and nutrients, and low in carbs.

Summer Special Spanish Gazpacho Soup

Ingredients
- 1 tbsp olive oil
- 1 large red ripe tomatoes
- ½ cup red bell pepper diced
- green bell pepper diced
- 8 - 10 cherry tomatoes (optional)
- 2 tbsp coriander leaves
- 5 - 6 garlic cloves
- 1 jalapeno or green chili deseeded
- 1 onion Medium
- 1 tsp salt or as taste
- ½ tsp crushed black pepper
- ¼ cup red wine vinegar
- ½ tsp cayenne pepper optional
Instructions
- Chop tomatoes, cucumber,bell pepper, jalapeno, coriander leaves, onion, garlic. Grind together adding little water.
- Blend to smooth puree. No straining is required.
- Add bread slice, red wine vinegar, salt, lemon juice, cayanne pepper and stir well.
- Add olive oil and garnish with few chopped coriander leaves.
- Refrigerate for minimum 3 hrs. Serve this with bread croutons or any salad.
