Cool yourself with this cooling refreshing Spanish Gazpacho Cold Soup this summers. This is a quick and healthy summer special recipe that takes less than 5 minutes and at the same time keeps us hydrated maximum.

Summer means heat and we try to keep ourselves hydrated. The best to keep hydration level high is by drinking the juice, having fresh fruits, etc.

This Gazpacho Soup belongs to Spanish cuisine authentically. When we talk about soup, it’s normally cooked and served. But the specialty of this soup is that this is not cooked and served chilled.
Normally it’s the raw puree of tomato, cucumber and bell pepper combined with few more herbs and spices such as onion, garlic, jalapeno, coriander leaves/ mint leaves.
Add balsamic vinegar or red wine vinegar or malt vinegar and lemon for that tanginess. Olive oil and salt added in the end. This is pureed to a very fine paste. Sprinkle freshly crushed black pepper.
To make this thick, add lesser water while grinding. Also, add 1 – 2 slice of bread to make the soup thicker and filling.
Blend these healthy vegetables together to a puree and refrigerate for a few hours and serve cold. This soup is keto-friendly and this good food is full of fibers and nutritions and low in carb.

Summer Special Spanish Gazpacho Soup
- Chop tomatoes, cucumber,bell pepper, jalapeno, coriander leaves, onion, garlic. Grind together adding little water.
- Blend to smooth puree. No straining is required.
- Add bread slice, red wine vinegar, salt, lemon juice, cayanne pepper and stir well.
- Add olive oil and garnish with few chopped coriander leaves.
- Refrigerate for minimum 3 hrs. Serve this with bread croutons or any salad.
