Low Carb Keto Ridged Gourd Curry
Ridge Gourd is known as Torai or turai belongs to the same gourd family as bottle gourd and bitter gourd. It's one of the healthy vegetables and is perfect for those who follow the keto diet. Gourd vegetables are low in carbohydrates and fat and ideal for the keto diet.
Ridge gourds have 90% water content, making them suitable for the summer season. Like other gourd family members, they have numerous health benefits.
This is a simple preparation with everyday aromatic spices. This belongs to North Indian food. Torai sabzi is a popular everyday food in North India. It takes hardly 10 minutes to make this curry. You can make this as a sauteed dish or a curry with a little gravy. For that, you don't need to add water to the curry. Turai is a water-rich vegetable and releases a lot of water while cooking. Let the veggies simmer in that itself.

Torai Curry
Low Carb Keto Ridged Gourd Sautee
Ingredients
- 3 Tbsp Mustard Oil Or olive oil or any refined oil
- 250 Gm Ridge gourd
- 1 Onion Sliced
- 1 Tomato Diced
- 2 Tbsp Coriander Powder
- 1 Tbsp Red Chilli Powder
- 1/2 Tsp Turmeric powder
- 2 Green Chili
- 1 Tsp Cumin seeds
- 2 Tbsp Coriander leaves
- 1 Tsp • Salt as per taste
Instructions
- Slice the Ridgegourd after peeling the skin.
- Heat oil in a pan. Add cumin seeds, let it crackle. Add green chillies, crushed garlic, saute for a minute. Add sliced onions and saute.
- Once onion becomes translucent, add tomatoes and Ridgegourd. Add salt and mix well.
- Saute for 2 minutes on high flame with continuous stirring. Add all spices and mix well.
- Cover with a lid and Saute on medium to low flame till ridgegourd is cooked soft
- Add chopped coriander leaves and a pinch of garam masala.
- Sauteed ridgegourd is ready.
Notes
- If using mustard oil wait till oil is smokey hot and releases pungent smell.
- Turn off gas and wait for a minute to reduce the temperature of oil slightly else when you add cumin seeds they will turn brown.
