How to cut broccoli for this raw broccoli salad?
Since this broccoli salad has raw broccoli, the best way to chop the broccoli into smaller chunks is that larger bites may not absorb the flavors of dressing appropriately and will have a chewy texture. It may not be a pleasant experience.
Cut the hard end of the stalk. Divide the broccoli head into bite-sized florets with stalks. Again, from the florets, cut out the tender stalks. Now cut the tender stalks into juliennes or small pieces. Again, a sharp chef's knife splits the florets into small chunks.
Vegan Broccoli Salad
This is an easy broccoli salad with a combination of some sweet, tangy fruits and a simple red wine vinaigrette.
Ingredients-
Broccoli + apple + red pepper + tangerine/ mandarin/ orange + red onion
Broccoli - 1 raw broccoli head. If you don't like raw broccoli, microwave it for 2 minutes or put it in an instant pot (instant pot broccoli).
Apple - Add a variety of apples, like red and green apples, to have a vibrant color and crunchy bites to the salad.
Red pepper - Red pepper adds a crunchy bite to the salad. Add any pepper to the salad.
Orange - Add any orange to the salad for a sweet, tangy flavor.
Onion - Red onions finely chopped.
For vinaigrette :
- Red wine vinegar + maple syrup + extra virgin olive oil + Dijon mustard + garlic powder + dried oregano + salt + pepper
- You can also replace red wine vinegar with apple cider vinegar.
- To make this WFPB, remove olive oil and add 2 tbsp orange juice (fresh)
Instructions: -
- Chop the broccoli, onion, apple, and red pepper into fine pieces. Transfer them to a mixing bowl. Remove the seeds of oranges.
- Now, take a jar and mix the ingredients for the vinaigrette. Close the lid and shake well to mix the ingredients nicely.
- Now, pour the salad dressing into the broccoli and fruit mix bowl. Toss them well.
- Let the salad rest for 15- 30 minutes before serving so that all flavors mix nicely. However, you can serve it immediately as well.

Can I make the salad ahead?
You can prep the ingredients and refrigerate them in an air-tight box. Similarly, the vinaigrette stays suitable for 5 -6 days when stored properly in the refrigerator. Store it in a glass bottle or jar closed with a lid. Remove and mix both just before 30 - 60 minutes before serving. It will let you soak up the flavors nicely but won't make the veggies soggy.
How do you store the leftover salad?
If you have added the dressing and a lot of leftovers in hand, you can still store it for 1 - 2 days in the refrigerator. But don't expect any crunchiness from the salad. At the same time, the salad will have a flavor-infused and juicy texture. To add crunch, you can instantly add freshly chopped onions, fresh apple chunks, or any other fresh fruits.
Can I make this salad creamy yet vegan?
You can add vegan cashew cream dressing to the salad instead of vinaigrette. The flavor will be different. You can also add avocado cilantro dressing to this salad to make it complete WFPB.
Can I refrigerate this vegan broccoli salad?
Absolutely yes. This tastes even better when we leave it for some hours as the flavors get soaked up by the veggies and fruits. This salad goes best for 4 - 5 days in the refrigerator.

Ingredients
- 1 broccoli head medium head
- 1 tangerine or orange
- 1 apple
- 1 red onion finely chopped
- ยฝ red pepper
Vinnaigrate
- 4 tsp red wine vinegar or apple cider
- 2 tsp olive oil extra virgin
- 1 tbsp maple syrup
- 1 tsp dijon mustard
- ยฝ tsp salt to taste
- ยฝ tsp black pepper
- ยฝ tsp garlic powder or 2 garlic clove minced
- 1 tsp dried oregano or Italian seasoning
Instructions
- Wash and clean the broccoli.
- Cut out the hard part of the stalk.
- Break the broccoli into small florets.
- Now cut the tender stalk from the florets and chop it into thin julliens.
- Then cut the broccoli florets into small pieces. (I love smaller chunks)
- Cut the fruits into small pieces.
- Deseed the orange and chop or leave it whole.
- Chop onion and red pepper into fine pieces.
- Place all the chopped things into a large mixing bowl.
- Now take a small jar.
- Into the jar add the ingredients mentioned above under vinnaigrette section.
- Shake well so that they will be mixed well.
- Now pour in the vinaigrette into the bowl of veggies and fruits.
- Give a nice gentle stir.
- Let it rest for some time before serving. this will help in absorbing the flavors.
