    Avocado cilantro lime dressing - one of the best vegan dressings that is so versatile to add to the tacos, burritos, fajitas, salads, and whatnot. This is creamy in texture yet vegan and a dairy-free dressing.

    Salad dressings are normally easier to make and you can store them for longer when stored properly. But these are normally loaded with fats like oil. But here the avocado cilantro lime dressing is healthier than other dressings if we will see the healthy fat of avocado. Avocado is one of the healthiest vegetables. This is much loved for its good fat.

    Avocado cilantro lime dressing is vegan and dairy-free. This is also gluten-free. Avocado dressing is paleo-friendly as well as keto-friendly too. One of the healthiest salad dressings indeed. I love to add this dressing to my southwest salad.

    This avocado cilantro lime dressing is equally smooth and creamy like any of the cream-based dressings but at the same time, it doesn't contain more calories and bad fat which most of the salad dressings have. So this is the ultimate healthy dressing to add to your salads which will not defeat the purpose of eating healthy salads.

    Avocado - Nutrition and health benefits

    The nutrients in avocado help in the prevention and treatment of life-threatening ailments like cancer, cardiovascular diseases, etc. It provides protection against prostate cancer, prevents the hardening of arteries, improves blood sugar levels, lowers cholesterol levels in the body, and enhances absorption of nutrients. It protects us from cataracts and other neurodegenerative diseases.

    The antioxidants, nutrients, and healthy fats help our bodies in many ways- including the following: -

    • Prevents Heart Diseases -

    It prevents various cancers including prostate cancer as these nutrients, plant sterols, and poly- and monounsaturated fats make avocado a heart-healthy fruit. These nutrients play an important role in preventing the clogging of arteries that causes heart attacks. The antioxidants also protect against free radical damage to cells and tissues that can cause chronic diseases like cancer. It also regulates healthy cholesterol levels.

    • Protect against neurodegenerative diseases -

    Avocado is rich in plant lutein and zeaxanthin which helps to prevent age-related macular degeneration (ARMD) and cataracts. Carotenoids present in this fruit are known for their antioxidant qualities, they enhance the immune system.

    • Prevents Arthritis -

    This fruit contains anti-inflammatory properties which reduce swelling and pain associated with arthritis. It acts as an inhibitor of enzymes called COX-2, thereby prevents inflammation caused by osteoarthritis or rheumatoid arthritis.

    • Good for eyes -

    Prevent several eye diseases like cataracts, glaucoma, and macular degeneration with the help of avocado fruit. Lutein and zeaxanthin are carotenoids found in avocados that are good for eyesight.

    • Vitamin E is great for our skin

    This fruit has less fat than other oils due to its high monounsaturated fat content. It's a perfect choice as a base for a salad dressing.

    Avocado Cilantro Lime Dressing

    Ingredients:

    1 ripe avocado, 1/4 cup olive oil, 2 tablespoons lime juice, 1 tablespoon chopped fresh parsley, 4 cloves garlic, 2 tablespoons finely chopped cilantro, 1 teaspoon salt (or to taste), and pepper as needed. Plus 1/4 cup water to dilute the consistency if required.

    Preparation:

    Combine all the ingredients in a blender or food processor; blend until and creamy! Pour into a bowl and season with salt and pepper to taste. Serve over your favorite salad greens, cooked vegetables, or meatless dishes such as tacos or burritos.

    Equipment

    • Blender

    Ingredients
      

    • 1 avocado
    • 4 garlic cloves
    • 1/4 cup olive oil
    • 2 tbsp cilantro leaves chopped
    • 1 tbsp parsley leaves chopped
    • 1 lime (juice of 1 lime)
    • 1/2 serrano pepper optional and skip if not require spicy
    • 1/2 tsp black pepper powder
    • 1/2 tsp salt or as per taste
    • 1/4 cup water optional to make dressing concentration

    Instructions
     

    • Remove the skin and seed of the avocado.
    • Add them to the blender along with other ingredients mentioned.
    • Blend it to a smooth paste.
    • Remove from the blender and transfrer to an air tight jar to refrigerate or use immediately.

    Adjust salt and pepper to taste.
    Add water as per your desired consistency.
    If you like it to be spicy, then add serrano pepper or jalapeno pepper. Otherwise, skip it.
    For the WFPB diet, replace oil with water.
