Eggplants are a very common vegetable in Indian cuisine as well as in world cuisine. This belongs to the class of berries (a fruit, botanically) but is used as a vegetable culinarily, just like tomatoes. Both tomatoes and eggplants belong to the same Solanaceae (nightshade) family botanically.
This is a versatile vegetable that you can incorporate into your diet in various forms and recipes. Use this to make any snacking items, such as curry, add it to your rice, or use it to make raita or a dip. All these eggplant recipes are suitable for vegetarians and vegans. Mashed eggplant, Stuffed eggplants, Aloo baingan, Bagara Baingan, Eggplant pumpkin curry, soupy spinach and eggplant, laal saag, and dalma are all vegan options. In contrast, dahi baingan has a curd-based gravy and hence doesn't fall under the vegan category.

Baingan Chokha
Baingan chokha is similar to baingan bharta (mashed eggplant). These are fire-roasted eggplants infused with spices. However, this baingan chokha is yet simpler than the later one. In this chokha, we are not cooking the other spices.
Servings - 2
Total Time - 10 minutes
Ingredients
- Large eggplant 1
- Red onion - 1 medium (finely chopped)
- Green chili - 1 finely chopped
- Garlic - 2 pods
- Tomato - 1 small (optional)
- Raw mustard oil - 1 tbsp
- Salt to taste
Instructions:
- Clean the eggplants properly. No need to peel.
- Brush the skin with little oil. Put it directly on the fire.
- Roast it evenly by flipping in between. It will take up to 5 minutes.
- Once done, remove from flame and keep aside to cool.
- Now scrape out the burnt skin from the roasted eggplant.
- Now put the soft fleshy part into a bowl.
- Add in raw mustard oil, finely chopped garlic, onion, green chillies, finely chopped tomatoes (optional) along with salt to taste.
- Mix all ingredients well and your delicious baingan chokha is ready.
Begun Bhaja (Eggplant Fry)
Begun bhaja or baingan bhaja or eggplant fry is a simple East Indian eggplant recipe. This is a vegan, gluten-free eggplant fry. This is a pan-fried eggplant recipe in fact. Though it's similar to that of the grilled eggplants, there is a little difference in the way of making it as well.
This is a simple recipe. Just marinate the eggplant for few minutes and then pan fry them for 4 - 5 minutes. To make it crispy, add little rice flour or chickpea flour to the marinade mixture. Also, take large eggplants for this recipe
