Soya Biryani, aka soya chunks biryani, is an instant biryani cooked in a pressure cooker. This easy and quick lunch recipe takes less than 30 minutes.
Soya bean is rich in protein. They even contain more protein than lentils and legumes. This is a healthy replacement for meat for vegetarians and vegans.
Soya granules or chunks are the primary ingredients in this biryani recipe. This is an instant biryani. You can also cook using the dum cooking method, but I have cooked in normal pressure cooking mode. You can make this easy rice in a manual pressure cooker or an instant pot. This is one of the best one-pot meals, packed with protein-rich soya chunks.
How to make soya biryani?
Ingredients
Rice - Basmati or long-grain rice will be good for this rice recipe.
Soya chunks - 1 cup dehydrated granules
Vegetable oil / Ghee (clarified butter) - ghee brings a nice aroma and flavor. However, you can also substitute this with any vegetable cooking oil.
Onion - for masala and birista (caramelized onions)
Curd - beaten curd
Ginger garlic paste - you can also use crushed ginger, garlic, and green chilies (optional). I have used store-bought ginger garlic paste.
Tomato - fresh tomato finely chopped
Whole spices - Bay leaf, cardamom, cinnamon, cloves, star anise, black pepper, cumin seeds
Ground spices - hing (asafoetida), coriander powder, cumin powder, red chili powder (paprika), turmeric powder, biryani masala (optional)
Salt & black pepper to taste
Water - as required to boil soya chunks
Rice to water proportion should be 1:2
Instructions to make soya biryani
Step 1 - Preparation
Rinse and soak the rice for 10 - 15 minutes.
Deep fry the sliced onions in a frying pan until they turn brown and are caramelized. Fry them in batches as oil may spill over, making a foamy texture when you add onions to the hot oil. Once they reach the desired crispiness, remove them and place them on a paper napkin.
Rehydrate the soya chunks -
Heat water in a saucepan, adding salt to it. Add dehydrated soya granules to the boiling water. Turn off the heat and cover it with a lid. Remove them from hot water after 5 - 7 minutes and rinse once or twice in regular water. Squeeze out excess water from the chunks. This will help in absorbing the flavor of spices.
Step 2 - Using Manual Pressure Cooker
In a pressure cooker, heat ghee or oil. Once the oil is hot, add bay leaves, cinnamon, cardamom, cloves, black pepper, and star anise and saute for 30 seconds or till it's fragrant. Then add cumin seeds and let it crackle.
Now add ginger garlic paste and saute till it leaves a pungent smell. Next, add chopped onions. And saute till translucent. Then add chopped tomatoes and cook until soft. Add coriander, turmeric, red chili powder, and biryani masala. Mix well. Add a little water to avoid burning the ground spices.
Next add hung curd and mix well. Add salt. Stir them well until the spices and curd release oil. Then add soya chunks and simmer for 2 minutes. After that, add soaked rice, followed by the required amount of water. Sprinkle some biryani masala and chopped coriander leaves.
Close the lid of the pressure cooker and cook for two whistles. Wait until pressure is released naturally, and then open the lid and fluff the rice using a fork or spoon. Garnish with some more coriander leaves and serve with raita.

- 1.5 cup rice (uncooked)
- 1 cup soy chunks
- 1 onion finely chopped
- 1 onion thin sliced
- 1 tomato finely chopped
- ¼ cup hung curd (beaten)
- 3 - 4 tbsp ghee or melted butter
- 2 bay leaves
- 4 - 5 cloves
- 7 - 8 black peppers
- 1/2 inch cinnamon stick

- 1 tbsp ginger garlic paste
- 1 + 2 tsp salt (or as per taste) 1tsp while soaking the chunks and 1.5 - 2 tsp in the biryani
- 3 tbsp coriander leaves finely chopped
- 2 tsp coriander powder
- 1 tsp red chili powder or as per taste preference
- ½ tsp turmeric powder
- ½ tsp black pepper powder optional
Instructions
Preparation For Biryani
- Wash and soak rice for 15 minutes
- Soak soya granules in 1 cup hot water.
- Add some salt in water and cover with a lid.
- After 7 - 8 minutes strain out from water.
- Rinse with cold water twice or thrice squeezing out all water from the chunks.
Pressure Cooking Biryani
- Heat ghee in a pressure cooker.
- Add bay leaves, cinnamon stick, cardamom, cloves, pepper, anise and saute for 30 seconds.
- Then add cumin seeds and let them crackle.
- Add ginger garlic paste and and saute till it leaves pungent smell.
- Now add chopped onions and saute till translucent.
- Then add chopped tomatoes and saute till soft.
- Now add in ground spices like coriander powder, turmeric powder, red chilli powder, biryani masala.
- Add little water and cook for another minute.
- Now add soya granules and stir well.
- Add hung curd and mix well.
- Simmer for 2 minutes and then add salt.
- Now add soaked rice on top of it. Add 3 cups of water.
- Sprinkle some biryani masala and ghee on top of rice.
- Also add some coriander leaves and brown onions on top.
- Close lid of pressure cooker and cook for 2 whistles.
- Turn off heat and wait till pressure released.
- Garnish with some more coriander leaves and serve hot.
- Serve with curd or raita.
