    Moong Sprouts Curry (Sprouted Moong Recipe)

    You must try this curry recipe if you are looking for some good sprouted moong recipes. This is vegan, gluten-free, and healthy also.

    Moong sprouts curry is a protein-rich dish that goes well with rice or flatbreads. This simple and quick everyday dish takes 15 - 20 minutes to prepare if you have sprouts ready. However, making sprouts may take more than 18 - 24 hours.

    How to make sprouts?

    To make sprouts, you need to soak moong dal for 6 hours. Then, strain out all the water. Cover the soaked dal with a thick napkin or kitchen towel and keep it in a warm place for 6 - 8 hours or overnight. Sprouts require hot and humid conditions to grow, so they may take longer on winter days. You can make sprouted moong, refrigerate them in an airtight container for up to a week, and use them whenever needed. Or you can try store-bought sprouts.

    Ingredients You'll Need

    Sprouted moong beans

    Onion, ginger, garlic, and green chili

    Tomatoes - fresh chopped

    Spices - Cumin seeds, hing (asafoetida), coriander powder, cumin powder, red chili powder (or paprika), turmeric powder, and salt

    Optional spice - Garam masala or curry powder

    Garnish - cilantro leaves, lemon.

    How to make moong sprouts curry?

    Heat oil in a pan. Add cumin seeds and let them splutter. Then add hing, followed by onion, ginger, and garlic. Saute for 2 - 3 minutes on low flame until the onion turns translucent. Then add the tomatoes, followed by salt. Salt helps to soften the tomatoes.

    Once the tomatoes are soft and mushy, add all the ground spices mentioned. Give them a nice stir and simmer for 1 minute on low flame. You'll notice oil when the masala is cooked.

    Now add the sprouted moong. Stir them well. Simmer for 2 minutes on low flame without adding water. Let sprouts soak the flavor of spices. After that, depending on the thickness you need, add water and simmer until you get the desired consistency.

    Once done, turn off the heat. In the end, add chopped cilantro leaves with a drizzle of fresh lemon juice. You can also add garam masala to the curry for the flavor of whole spices. A delicious sprouted moong beans curry is ready.

    Equipment

    • 1 pan or skillet
    • 1 Spatula

    Ingredients
      

    • 2 - 3 cups sprouted moong
    • 3 tbsp refined oil
    • 1 large onion finely chopped
    • 2 medium tomatoes finely chopped or blend to puree
    • 1 tbsp ginger garlic paste 6 - 8 garlic cloves + ยฝ inch ginger
    • 1 tsp cumin seeds
    • 3 tsp coriander powder
    • ยฝ - ยพ tsp cumin powder
    • 1 tsp red chilli powder or as per taste preference
    • ยฝ tsp turmeric powder
    • 1 tsp salt or as per taste
    • ยฝ - ยพ tsp garam masala as taste preference
    • 1 tsp lemon juice
    • 2 - 3 tbsp coriander leaves finely chopped

    Instructions
     

    • Make sprouted moong as mentioned above (or refer to the notes below).
    • Heat oil in a pan.
    • Add cumin seeds and let it crackle.
    • Add hing, ginger garlic paste (or chopped) and saute till the raw smell goes off.
    • Add chopped onion and saute till translucent.
    • Then add chopped tomatoes followed by salt.
    • Cook for 2 - 3 minutes or till the tomatoes are cooked and tender.
    • Now add coriander powder, cumin powder, red chilli powder, turmeric powder and saute for a minute.
    • When it leaves oil, add sprouts to the pan.
    • Stir well and saute for 2 - 3 minutes.
    • Add 1 cup water and cover with a lid.ย 
    • Let it simmer for 6 - 8 minutes or till you get the desired consistency.
    • Stir occasionally.ย 
    • In the end add pinch of garam masala.   
    • Add lemon juice and finely chopped coriander leaves.
    • Turn off heat and serve hot with roti or rice.
