Make sprouted moong as mentioned above (or refer to the notes below).
Heat oil in a pan.
Add cumin seeds and let it crackle.
Add hing, ginger garlic paste (or chopped) and saute till the raw smell goes off.
Add chopped onion and saute till translucent.
Then add chopped tomatoes followed by salt.
Cook for 2 - 3 minutes or till the tomatoes are cooked and tender.
Now add coriander powder, cumin powder, red chilli powder, turmeric powder and saute for a minute.
When it leaves oil, add sprouts to the pan.
Stir well and saute for 2 - 3 minutes.
Add 1 cup water and cover with a lid.
Let it simmer for 6 - 8 minutes or till you get the desired consistency.
Stir occasionally.
In the end add pinch of garam masala.
Add lemon juice and finely chopped coriander leaves.
Turn off heat and serve hot with roti or rice.
Notes
How to make sprouts?
To make sprouts you need to soak moong dal for 6 hours. Then strain out all the water. Cover soaked dal with a thick napkin or kitchen towel and keep it in a warm place for 6 - 8 hours or overnight. It requires hot and humid conditions to grow the sprouts. So it may take longer on winter days.
