Masala Uttapam is a variety of uttapam made with spicy potato topping. It's a delicious yet easy South Indian breakfast item.

I love to make something different on our menu on weekends. So, I usually keep this for my Sunday breakfast menu. But this is equally easy to make on weekdays if you have made the batter and the potato masala well in advance and refrigerated. So in the morning, it takes hardly 15 minutes to make a serving of 2 - 3 people.
The batter used in making uttapam is the same as that used forย idlis and dosa. Please read myย onion uttapamย recipe here orย the masala dosaย recipe for theย batter.
This is also called a sandwich uttapam in some places. In this recipe, the top layer is spiced potato masala. But if you want, you can layer the top with the same batter. Soon, I will make and share the recipe here.

How to make masala uttapam?
This recipe has three steps: making the batter, making the potato masala, and making uttapam.
Preparing batter for uttapam
As I said, the batter is the same as that for other dosas and idlis. You may check out my masala dosa recipe for the batter. In the same recipe, you will find notes on making spicy potatoes for dosas and uttapam.
Preparing spicy potato
Prepare the batter and potato stuffing well in advance. In stuffing potatoes, mustard seeds, garlic, green chilies, curry leaves, turmeric powder, and salt are used to temper the boiled and mashed potatoes.
Boil and mash potatoes nicely with the help of a masher or fork.
Heat oil in a pan. Add mustard seeds and cumin seeds, and let it crackle.
Then add chopped garlic, curry leaves, green chilies, and chopped onion, and sautรฉ until translucent.
Add turmeric powder and salt. In 10 seconds, add mashed potatoes and mix well. Sautรฉ for a minute and then turn off the heat.
Add coriander leaves and mix well.
Preparing Masala Uttapam
Heat a flat tawa or dosa tawa. Grease it with the help of onion halves, a crown of brinjal, or a paper napkin.
Pour a ladleful of batter on the tawa. Spread it gently, keeping the layer thick like uttapam. Pour 1 tsp oil on the sides.
Sprinkle some finely chopped onion, tomatoes, and garam masala very quickly.
Next, spread the potato masala quickly on top of the uttapam. Keep the flame low during the process so the masala sticks to the top.
Lightly press the masala with the help of a spatula.
When the base is crisp and cooked, it leaves sides. Slowly flip to the other side.
Keep for 1 minute on low flame. Then remove from the pan and serve hot.

Masala Uttapam
Equipment
- 1 Spatula
Ingredients
- 500 gm Idli dosa batter
- 6 - 8 tsp oil
- 1 onion finely chopped
- 1 tomato finely chopped
- 2 tbsp coriander leaves finely chopped
- 2 green chilies finely chopped
- 5 tsp garam masala or sambar masala or as required
Potato Stuffing
- 5 - 6 large potatoes
- ยฝ tsp mustard seeds
- ยฝ tsp cumin seeds
- 6 - 8 curry leaves
- 2 - 3 green chillies finely chopped
- 2- 4 garlic cloves finely minced
- ยฝ inch ginger grated
- 1 small onion finely chopped
- ยฝ tsp asafoetida/ hing
- ยฝ tsp turmeric powder
- 1 tsp sambar masala
- ยฝ - 1 tsp salt as taste
- 1 tbsp lemon juice
- 2 tbsp coriander leaves
Instructions
Preparing potato masala
- Boil the potatoes and peel them. Mash potatoes once cooled to room temperature.
- Heat oil in a pan.
- Add mustard seeds and cumin seeds. Let them splutter.
- Now add chopped garlic, ginger and green chillies.
- Add a pinch of hing and curry leaves.
- Then add chopped or sliced onions and saute till translucent.
- Now add salt to taste, sambar masala, and turmeric powder.
- Add boiled and mashed potatoes and mix everything well.
- Add 5-6 tbsp of water to make it a little mushy.
- Remove from the heat and add coriander leaves.
Preparing Uttapam
- Heat tawa/ dosa tawa/ flat pan.
- Grease the pan with onion halves or with help of a paper napkin.
- Pour a ladleful of batter on tawa. (keep on low flame)
- Spread lightly with gentle hand keeping the layer thick.
- Quickly sprinkle garam masala, chopped onion and tomatoes.
- Next spread potato stuffing mixture on top layer.
- Gently press the potatoes so that it will stick nicely to the batter.
- Drizzle 1 tsp oil on sides of uttapam.
- Once base is crisp and cooked, it starts leaving sides.
- Now flip it gently and cook for 1 minute on low flame.
- Then remove from heat and serve hot chutney or sambar.
