    Aloo Matar Poha/ Potato Green Peas Flattened Rice

    Traditionally poha is a staple breakfast food in Maharashtra. But this is not restricted to any particular region and one favorite breakfast recipe in all parts of the country by now.

    This is easy to make and filling at the same time. In a week I make poha in breakfast at least 3 - 4 days a week.

    Poha is one healthy food option for kids as well. This aloo matar poha is a variation of original kanda poha.

    Its called kanda poha in Maharashtra as kanda or onion is an important ingredient. We are adding potatoes and green peas to make it more tasty for kids.

    What is poha?

    Poha is nothing but rice that parboiled, pressed to flatten and dried to flakes. This is little brownish-white in color. It comes in different sizes depending on the pressure given during the process.

    Add this healthy breakfast to your list. I have replaced peanuts with green peas. Authentic poha recipe they add coconut and sev also. But I serve them with finely chopped onions and tomatoes also. This also tastes equally great.

    Why poha is a healthy breakfast?

    Poha is low in calories and high in carb and fiber. The good carbohydrate in poha boosts our energy that is required in the morning to stay charged up the whole day.

    Because of fiber and protein, it keeps us full for longer. So we don't crave unhealthy food. This helps us to maintain our proper weight. Combine with a cup of green tea for your breakfast.

    Tips to make perfect fluffy poha

    Wash poha thoroughly and keep it as it is for 3 - 5 minutes so that it will soak water and turns soft. Fluff it with spoon or fork lightly.

    Add salt and turmeric powder and mix it gently. If you want a little spicy you can add half tsp red chili powder now.

    While frying onions and potatoes, add onions and saute for just a minute before adding potatoes. Don't wait for onions to get translucent first. Else it might turn brown by the time potatoes get cooked properly.

    After adding poha to the pan of potatoes and onions, don't simmer for more than 1 minute. Else it will turn tight and hard when overheated.

    Poha is made with minimal ingredients and fewer spices but it tastes divine in fact. Curry leaves add extra flavor and this is an important ingredient in this recipe.

    Similarly, lemon juice is a must for better taste. Garnish with chopped coriander leaves. I love this with finely chopped tomatoes and onions on top of it. You may add some sev bhujia or grated coconut for garnish.

    Ingredients
      

    • 1 cup Poha / Flattened Rice
    • 5 tbsp Refined Oil
    • 1/4 cup Green Peas
    • 1/2 tsp Mustard Seeds
    • 1 Onion sliced
    • 2 medium Potato peeled and diced
    • 8 - 10 Curry Leaves
    • 2 Green Chillies chopped
    • 1/2 tsp Turmeric
    • 1/2 tsp Salt (or as per taste)
    • 2 tbsp coriander leaves finely chopped
    • 2 tbsp lemon juice

    Instructions
     

    • Take 1 cup of poha and wash it properly and keep aside for 2 - 3 minutes till it's soft and fluffy. Then add salt (as per taste) and turmeric powder to poha and mix gently.
    • Heat oil in a pan. Once oil is hot put mustard seeds and let it splutter.
    • Now add curry leaves, green chillies and onions. Saute for 2 minutes on low flame. Then add diced potatoes and green peas and cover with lid. Keep on low flame.
    • Once potatoes & peas are properly cooked, add soaked poha into it.
    • Mix well and saute for a minute. Add in lemon juice and coriander leaves. Give it a nice stir and turn off the heat.
    • Cover with a lid and rest for a minute before serving.
    • Serve poha served with finely chopped onion and tomato on top of it with freshly chopped coriander leaves.
