Corn cucumber tomato salad is a simple vegan salad made with a few ingredients. Serve this as a side dish.

Corn Tomato Cucumber Salad
Sweet corn kernels, bright ripe tomatoes, and crunchy cool cucumber mixed in a bowl make it the perfect side dish with any main course. This corn-tomato cucumber salad is super easy, fresh, and cool. It hardly takes 10 minutes to make this crunchy, tangy salad. You can take one bowl as your main dish for a light meal.
Ingredients
Corn kernels - you can take fresh corn or frozen ones
Cucumber, onion, tomatoes - fresh
Chillies - These are optional. You can add jalapeno pepper or serrano pepper.
Garnish - coriander leaves, mint leaves (optional)
Seasoning - olive oil, lemon juice, salt, black pepper
Instructions
There is no need to peel off the skin of the cucumber. Try the cucumber that has a thin and dark skin layer. Chop into the desired shape or bite-sized pieces. Similarly, chop the tomatoes, onions, and chili (if using).
Blanch the corn kernels for 4 - 5 minutes. And remove once done. Wipe with a kitchen napkin to remove extra water, and let it air dry for some time. Once at room temperature, transfer to a large mixing bowl. Add chopped cucumber, tomato, and onion.
Add salt and squeeze a fresh lemon. And then add 1 tsp olive oil. Mix them all well.
Variations
I have taken sweet corn (frozen), fresh cucumbers, fresh and ripe tomatoes, and crunchy red onions. I have added spicy hot green chilies. You can add jalapeno if you have one. A dash of lemon juice and a spoonful of olive oil makes it perfect.

Equipment
- 1 Saucepan
- 1 Sieve
Ingredients
- 1 cup sweet corn kernels boiled
- 2 cucumber finely chopped
- 2 ripe tomato finely chopped
- 1 medium onion finely chopped
- 2 green chilli finely chopped
- 1 tbsp fresh corinader leaves finely chopped
- ยฝ tsp salt/ black salt
- ยผ tsp chat masala
- 2 tsp lemon juice
- 1 tsp olive oil
Instructions
- Boil sweet corn kernels for 3 - 4 minutes. Then strain out excess water and wash off in cold water.
- Transfer all ingredients to a large mixing bowl.
- Add olive oil, lemon juice, salt, pepper, and chat masala.
- Mix all ingredients above and give it a quick mix.
