This vegetable fried rice is an easy and quick vegan meal. Loaded with many veggies, this fried rice is flavored with Indian spices. You can also make this with leftover rice.
This is an easy one-pot dish. Mixing vegetable fried rice is an excellent option if you have lots of leftover rice in the refrigerator. This makes a quick recipe. Well, it has the nutrition of vegetables. You can add any vegetable or leafy vegetable to the dish. You can use freshly cooked rice also. If you are calorie-conscious, then take brown rice instead of white basmati.
Vegetable Fried Rice
Ingredients
Rice -: Cooked Rice or Leftover Rice
Vegetables -: onion, ginger, garlic, green beans, green peas, carrots, cauliflower, potatoes, green onions. You may add a few more veggies like broccoli, spinach, bell peppers, mushrooms,
Protein -: paneer or tofu (optional)
Spices -: coriander powder, cumin powder, turmeric powder, red chili powder, black pepper powder, hing/ asafoetida, and salt to taste
Garnish -: coriander leaves and lemon juice
Instructions
In a pan or kadai, heat oil. Add cumin seeds and let them splutter. Add hing or asafoetida, followed by chopped garlic and ginger. Saute for 10 - 15 seconds, and then add sliced onions. Saute for a minute. Add diced vegetables and stir well. Add salt and cover to cook. Keep it on low flame. Cook until half-cooked. Then add the spices and stir nicely to coat them well. If required, sprinkle 1 tbsp water so the ground spices will stick well to the veggies and won't burn. Cook the veggies till they are fork-tender and not mushy (over-cooked).
At this stage, add rice and stir them well but with gentle folds so that the rice won't break and turn soggy. Mix them well. Taste and add salt if required. Add chopped cilantro leaves and drizzle freshly squeezed lemon juice. Mix gently and serve hot with any side dish.
What to serve with veg fried rice?
You can serve this fried rice with plain curd or raitas. Here is a collection of raitas for you. You can also serve this with dal fry or any curries.
Vegetable Fried Rice
Equipment
- 1 Skillet/ pan/ kadai
- 1 Spatula
Ingredients
- 3 tbsp mustard oil or vegetable oil
- 1 cup green beans chopped
- 1 cup carrots chopped
- ¼ cup green peas
- 1 large potato chopped bite-sized
- ¼ cup green onions
- 1 onion chopped
- 6 - 8 garlic pods minced
- 1 inch ginger finely chopped
- 1 green chilli
- 1 tsp cumin seeds
- 1 tsp cumin powder
- 2 tsp coriander powder
- ½ tsp turmeric powder
- ½ tsp garam masala
- 1 small lemon
- 2 tbsp chopped coriander leaves
- 1 tsp salt
- 3 cups cooked rice
Instructions
- If you are making fresh rice then wash and cook the rice completely. Don't make it mushy. Cool the rice under tap water to stop overcooking.
- Heat oil in a pan/ wok/ kadai.
- Add hing/ asafoetida. Add in cumin seeds and once they crackle, add minced garlic and ginger. Saute for 15 seconds.
- Add in onion and saute for 1 - 2 minutes.
- Add vegetables and half of the salt and mix well.
- Cover with a lid and cook on low flame for 7 - 8 minutes till vegetables are just cooked completely but not over cooked (mushy).
- Add all spices and mix well. Saute for 1 minute.
- Then add cooked/ leftover rice, rest salt and spice, and mix thoroughly.
- Cook on high flame for some time, stirring occasionally till the spices get infused with rice.
- Add chopped coriander leaves and drizzle some fresh lemon juice. Turn off the heat and serve hot.
