Roasting okra takes this vibrant green pod to new heights of texture and taste, transforming it into a delightful combination of crispiness and tenderness. This is one of my favorite okra recipes.
What Is Okra?
Okra is also popular as a lady's finger. This tender green vegetable is also known for its slimy texture. Despite the slimy texture (of raw okra), okra offers numerous health benefits like a better immune system, healthy digestive tract, balancing weight, improved heart health, etc. This is a high source of fiber, vitamins, and minerals essential for many body functions. What Makes Okra Slimy?
Moisture and the wrong cooking method make the okra slimy.
Moisture - while prepping the okra, you must wipe them to dry before chopping. Else they will be slimier while chopping as well. Dry okra produces less sliminess.
Cooking method - Boiling makes the okra slimy. You can steam the okra for two minutes though. High-temperature cooking helps to eliminate the sliminess quickly as compared to the slow cooking method. You can stir-fry the okra easily. Check out my okra stir fry recipe.
Roasted Okra
Okra is not much loved because of its slimy texture probably. If you don't do it properly while prepping and cooking, the result will be a mushy soggy slimy okra that no one will love.
However, roasted okra is a culinary delight that brings out this unique vegetable's natural flavors and textures. In roasted okra, the okra gets a crispy and slightly charred exterior that contrasts beautifully with its tender interior.
Roasting adds a depth of flavor to the okra, enhancing its earthy and slightly nutty flavors. Also, they absorb the flavor of the spices and make a delectable side dish.

Ingredients For Roasted Okra -
Okra
olive oil
garlic powder
paprika
salt
How to Make?
Preheat the air fryer to 450 F.
Wash and clean the okra. Wipe them dry with a dry kitchen towel. Or air-dry the okra till they are completely dry.
Trim the ends. Dice them into bite-sized pieces. You can also slit them vertically making a long fries-like shape.
Place them in a deep bowl and add the seasonings followed by olive oil. Oil here will help to coat the okra with spices along with making the exterior crispy.
Line the baking tray with parchment paper and transfer the okra to the baking sheet.
Bake the okra for 15 minutes or until they turn tender with a lightly crisped exterior. Serve immediately. Make in batches if you are making in large quantities.

Ingredients
- 1 lb okra fresh and tender
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp sweet paprika
- ½ tsp cayenne pepper optional if you want a bit spicy
- salt as per taste
Instructions
- Preheat the air fryer to 450 F.
- Wash and clean the okra. Look for any damaged spots, bugs, pests, etc, and discard that part or that okra.
- Wipe them dry with a dry kitchen towel. Or air-dry the okra till they are completely dry.
