Ingredients you will need -
Zucchini or courgette - No need to peel off the skin. Trim both ends only before slicing/ chopping
Olive oil - Olive oil adds flavor to the vegetables. you can substitute it with any vegetable oil. Even avocado oil works well on air fryer recipes.
Parmesan Cheese - A sprinkle of parmesan will boost the flavor of roasted zucchini.
Seasonings - garlic powder, Italian seasoning. You can add any of the herbs of your choice. You can also add fresh garlic mince in place of garlic powder. Garlic adds a nice flavor to the roasted veggies indeed.
Salt & black pepper - as per taste
How to cut zucchini for the recipe?
You can cut the zucchini into desired shapes, like chips, thicker slices, small cubes, or fingers. However here I'm chopping the zucchini into medium-sized pieces. It takes lesser time and effort unlike slicing them into equally thick chips.
In whatever shape you dice the zucchini, make sure they are of equal size approximately. This is helpful for even cooking the veggie.
They shrink in size in the process of cooking. So don't worry if they look overcrowded initially. Try to arrange them in a single layer and if making in large quantity, make them in batches.
How to make air fryer zucchini?
It's one of the easiest recipes in fact. Even beginners can make this hassle-free. These are step-by-step instructions for how to air-fry zucchini.
Step 1 - Clean the zucchini and wipe with a kitchen towel to dry.
Step 2 - No need to peel off the skin. Just trim both ends a little bit. Then dice the zucchini into bite-sized cubes of equal size (approx).
Step 3 - Transfer the diced zucchini to a mixing bowl. Add seasonings followed by olive oil. Toss to mix everything well.
Step 4 - Preheat the air fryer to 400 degrees F for 2 - 3 minutes.
Step 5 - Spray a little oil on the basket to avoid sticking of the veggies to it. However, this is optional as using oil while seasoning.
Step 6 - Transfer the seasoned zucchini to the basket and air fry for 10 minutes. Shake the basket intervally. Check early to be safe and avoid overcooking the zucchini. Remove at desired doneness.

Avoid overcooking as it will make the zucchini soggy.
Zucchini has a lot of water in it. Air fry it at a high temperature like 400 degrees F for best results.
All air fryers cook differently. So timing may vary by 2 minutes here and there. Check early to be safe.

If you are not vegan, sprinkle some parmesan on the roasted zucchini bites.

Storage and Reheating -
These taste best when served fresh and warm. However, you can store the leftover zucchini in an air-tight container for up to 3 - 4 days. This also can be stored for up to 3 months in the freezer when packed properly.
However, storing the zucchini for longer will give a soggy zucchini. I recommend making them fresh as and when required for the best taste.
To reheat the zucchini, place them in the air fryer at 360 F for 5 minutes.
