Watermelon Gazpacho - Refreshing Summer Soup
Gazpacho is a Spanish cold soup made with tomatoes and cucumbers. But this is a twist to the authentic gazpacho soup. I have another melon based gazpacho soup recipe, i.e. cantaloupe gazpacho soup on blog.
Watermelon gazpacho is a savory and medium spicy soup recipe. This cold soup is perfect for your summer cravings. I have added Thai red chillies. You can also replace this with jalapeno or other chillies of your choice. quantity of chillies you can adjust as per the spice level you want in your soup.
Cucumbers are also high in water content and hydrating vegetable. We normally eat this superfood in raw form as salad. This also soothes our body and keeps our body cool. This is also a low carb vegetable and it also helps in weight loss.
