Creamy Broccoli Kale Soup (Vegan)
Ingredients:
Broccoli: Take large head broccoli or 5 - 6 cups florets. cut into florets. Don't throw the whole stem. Only discard the tough base part of the stem. Chop and use the tender stalk part in the soup.
Kale: Use sauteed kale as a topping to the broccoli soup. This will give a little crunch to the creamy soup.
Other Vegetables: Add celery stalk. You can also add other greens like spinach, green peas, and potatoes (to make it creamy).
Seasoning: Italian seasoning, paprika/ chili flakes, cayenne pepper (optional), salt, and pepper.
Instructions:
Heat oil in a large soup pot. Add onion and garlic and saute till translucent. Then add broccoli florets and stems to it. Sprinkle salt, pepper, and spices into it. saute for 5 minutes on low flame. Remove a few of the florets for garnishing (optional).
Now add vegetable stock (appx 3 cups) and simmer for another 3 - 5 minutes covering with a lid. After 5 minutes or when stems are also well cooked along with florets, puree it finely using a hand blender or in a blending jar. You may strain out the chunks using a fine mesh strainer.
Transfer the soup to the pot and add roughly chopped kale. Simmer for 3 - 4 minutes or till kale starts to wilt and becomes tender. You can also add air fryer kale to the soup.

- 1 medium broccoli head cut into florets
- 1 small onion finely chopped
- 2 large garlic cloves or 1 tsp garlic powder
- 2 + 1 tbsp olive oil saute + garnish
- ½ tsp paprika
- ½ tsp cayenne pepper
- ½ tsp salt to taste
- ¼ tsp black pepper powder
- ½ tsp hot sauce (optional)
- 2 tsp Nutritional yeast
Instructions

- Heat oil in a pan.
- Add onion and garlic and saute till translucent.
- Then add broccoli florets and stems to it.

- Saute for 5 minutes on medium flame.
- Remove 4 - 5 florets for garnish (optional).
- Now add water and simmer for another 3 - 5 minutes covering with a lid.
- After 5 minutes, when stems are also well cooked along with florets, add nutritional yeast .
- Then, puree it finely using a immersion blender or in a blending jar.
- You may strain out the chunks using a fine mesh strainer. However this is optional.
- Then simmer it for another 2 minutes.
- You may add non dairy cream here to get a smooth texture. But this is optional.
- Transfer the soup to the pot and add roughly chopped kale. Simmer for 3 - 4 minutes or till kale starts to wilt and becomes tender.
- Garnish with some red chilli flakes and some drizzles of olive oil.
