Creamy Broccoli kale soup aka green Goddess soup is a creamy vegan detox soup for chilly days of winter and fall. This is easy to prepare and delicious in taste. It's a healthy soup as well.
Now add water and simmer for another 3 - 5 minutes covering with a lid.
After 5 minutes, when stems are also well cooked along with florets, add nutritional yeast .
Then, puree it finely using a immersion blender or in a blending jar.
You may strain out the chunks using a fine mesh strainer. However this is optional.
Then simmer it for another 2 minutes.
You may add non dairy cream here to get a smooth texture. But this is optional.
Transfer the soup to the pot and add roughly chopped kale. Simmer for 3 - 4 minutes or till kale starts to wilt and becomes tender.
Garnish with some red chilli flakes and some drizzles of olive oil.
Notes
If you want a little vibrant color, you can add green food color. But that is optional. You can also add a few fresh spinach or green peas for a brighter color.
