    Broccoli Kale Soup (Green Goddess Soup)

    Vegan Creamy Broccoli Kale Soup is a healthy, low-carb comfort food. This soup is not only delicious but also packed with nutrients.

    Creamy broccoli kale soup is a simple and tasty way to get your veggies and warm your tummy. It's made by cooking fresh broccoli and kale in broth and flavorful seasoning. The veggies become soft and blend to create a smooth and thick soup. It's like a warm, green hug in a bowl. You can add seasonings to your choice or keep it simple.

    I love this creamy green soup. This broccoli kale soup is a vegan and detox soup and can be called green goddess soup. Broccoli and kale are both considered healthy vegetables. So, in this quick soup, we are getting numerous health benefits.

    Creamy Broccoli Kale Soup (Vegan)

    Ingredients:

    Broccoli: Take large head broccoli or 5 - 6 cups florets. Cut into florets. Don't throw the whole stem. Only discard the hard base part of the stem. Chop and use the tender stalk part in the soup.

    Kale: Use sauteed kale as a topping to the broccoli soup. This will give a little crunch to the creamy soup.

    Other Vegetables: Add celery stalk. You can also add other greens like spinach, green peas, and potatoes (to make it creamy).

    Seasoning: Italian seasoning, paprika/ chili flakes, cayenne pepper (optional), salt, and pepper.

    Instructions:

    Heat oil in a large soup pot. Add onion and garlic and saute till translucent. Then add broccoli florets and stems to it. Sprinkle salt, pepper, and spices into it. Saute for 5 minutes on low flame. Remove a few of the florets for garnishing (optional).

    Add vegetable stock (approximately 3 cups) and simmer for another 3 - 5 minutes, covering with a lid. After 5 minutes or when stems are well cooked with florets, puree it finely using a hand blender or in a blending jar. You may strain out the chunks using a fine mesh strainer.

    Transfer the soup to the pot and add roughly chopped kale. Simmer for 3 - 4 minutes or till kale starts to wilt and becomes tender. You can also add air fryer kale to the soup.

    Equipment

    • Spatula
    • Hand Mixer

    Ingredients
      

    • 1 medium broccoli head cut into florets
    • 1 small onion finely chopped
    • 2 large garlic cloves or 1 tsp garlic powder
    • 2 + 1 tbsp olive oil saute + garnish
    • ยฝ tsp paprika
    • ยฝ tsp cayenne pepper
    • ยฝ tsp salt to taste
    • ยผ tsp black pepper powder
    • ยฝ tsp hot sauce (optional)
    • 2 tsp Nutritional yeast

    For sauteed kale

    • 10 kale leaves
    • 2 garlic pods
    • salt to taste
    • 1 tbsp olive oil
    • 1 garlic clove minced

    Instructions
     

    Prepare Cream of Broccoli

    • Heat oil in a pan.
    • Add onion and garlic and saute till translucent.
    • Then add broccoli florets and stems to it.
    • Sprinkle salt, pepper, and spices to it.
    • Saute for 5 minutes on medium flame.
    • Remove 4 - 5 florets for garnish (optional).
    • Now add water and simmer for another 3 - 5 minutes covering with a lid.
    • After 5 minutes, when stems are also well cooked along with florets, add nutritional yeast .
    • Then, puree it finely using a immersion blender or in a blending jar.
    • You may strain out the chunks using a fine mesh strainer. However this is optional.
    • Then simmer it for another 2 minutes.
    • You may add non dairy cream here to get a smooth texture. But this is optional.
    • Transfer the soup to the pot and add roughly chopped kale. Simmer for 3 - 4 minutes or till kale starts to wilt and becomes tender.
    • Garnish with some red chilli flakes and some drizzles of olive oil.

    Notes

    If you want a little vibrant color, you can add green food color. But that is optional. You can also add a few fresh spinach or green peas for a brighter color.
