    Bhatura Recipe | Bhature For Chole | How to make quick bhatura

    Chole bhatura is a heavenly made combo. This delicious combo is an authentic cuisine of Punjabi. This combo is famous as chole bhature.

    Though you can have chole with any other poori or naan or even with rice, it's still best paired with this bhature in the combo.

    Chole bhature is a popular food across the country. Originally this belongs to North India (Punjab) but it's an equally popular dish across the country.

    What is bhatura?

    Bhatura is a deep-fried puffed bread. This is a little different than regular wheat flour poori. This is made with refined flour. Curd and soda make this soft with a slight crisp.

    If you remember my aloo kachori recipe, that dough is also made by adding curd and soda or eno. The only difference was flour. In aloo kachori dough we use whole wheat flour and for bhatura take refined flour or maida.

    Tips to make perfect fluffy bhatura?

    Very essential to add curd and eno to flour for fluffy bhatura. You can also add baking powder/ soda/ yeast for leavening.

    Add rava or semolina to make little crispy. Some also add rice flour. But my recipe is without any of these. i.e. I have taken only refined flour for this recipe.

    Use warm water for mixing and kneading dough. Add 1 - 2 tbsp oil while kneading flour.

    Knead this well for 8 - 10 minutes. Let it rest for 2 hours minimum.

    Equipment

    • Mixing Bowl
    • Deep Frying Pan
    • Rolling Board/ Pin

    Ingredients
      

    • 250 gms refined flour
    • 1 tsp sugar
    • 5 - 6 tbsp thick curd
    • 2 tbsp oil
    • ยฝ tsp soda or fruit salt or eno
    • ยพ cup warm water
    • ยฝ tsp salt

    Instructions
     

    • In a mixing bowl, add refined flour.
    • Add salt, sugar to this.
    • Now add refined oil and rava (if you are adding rava to it).
    • Mix all ingredients and rub with flour.
    • Now add curd and start kneading.
    • Add water little by little gradually and knead this to a soft and smooth dough.
    • knead well for 8 - 10 minutes.
    • Coat the dough with little oil on surface and cover with a damp cloth.
    • Keep in dry and warm place for 2 hours.
    • After 2 hours remove lid or cloth.
    • knead the dough for another minute.
    • Dust your fingers and palm.
    • Divide the dough into equal sized balls. (make little bigger balls)
    • Grease rolling board and rolling pin with oil.
    • Roll out balls into round or oval shape.
    • In the meanwhile heat oil in a frying pan for deep frying.
    • Drop rolled bhatura in hot oil.
    • Flip the bhatura and fry till both sides light golden in color.
    • Remove from oil and place on paper towel.
    • Serve hot with chole masala or any other curry.

    How to make Perfect Fluffy Bhature?

    Mix all ingredients and rub with flour. Now add curd and start kneading.

    Add water little by little gradually and knead this to a soft and smooth dough. knead well for 8 - 10 minutes. Coat the dough with little oil on the surface and cover with a damp cloth. Keep in a dry and warm place for 2 hours.

    After 2 hours remove lid or cloth. Knead the dough for another minute.

    Dust your fingers and palm. Then Divide the dough into equal-sized balls. (make little bigger balls)

    Grease rolling board and rolling pin with oil. Roll out balls into a round or oval shape.

    Heat oil in a frying pan. Drop rolled bhatura in hot oil. Flip the bhatura and fry till both sides are light golden in color.

    Remove from oil and place on paper towel. Serve hot with chole masala or any other curry.

      Hai Ipsa,
      Trying your recipe today.
      Shoudn't it be 2 cups of flour? 1 cup was around 125 grams flour.
      I did use 2 cups of flour (used flour type 00).

        Yes, Sona. My mistake I have considered 1 cup as 240 gms. To be more specific, I ll mention in grms only in post. Thanks for feedback.
