Lachha paratha is an Indian flatbread that is rolled with multiple layers. It's a little crispy than regular paratha because of the way it's been layered and shallow fried. Basically, lachha paratha is a layered flatbread.

This is a Punjabi food originally and lachha means "layers". So this paratha has many layers. Perfect paratha pleats separate and clearly noticeable.

Lachha paratha and Kerala paratha are almost similar with a little difference in ingredients. Both are layered flatbreads. But Kerala paratha is made with plain flour or refined flour and lachha paratha is made with a mixture of wheat flour and refined flour.
Here I have made this paratha with only wheat flour. Wheat flour is easily digestible and healthy for kids. I make this for my kid as it looks different and also has little more crunch he feels it's something different and more than that he likes it and without compromising on the health factor. So mummas pack some crispy lachha paratha for your kid's tiffin box along with some stir-fried veggies. They will just love that combo.
While making lachha or layers you can apply garlic butter or minced mint and coriander to make it even flavorful.

- In a large mixing bowl take wheat flour, ajwain, salt.
- Add little water at a time and mix all ingredients making a dough.
- Knead the dough for 5 minutes. The dough should not be very tight.
- Make the dough as required for roti or paratha.
- Cover with a damp cloth and let it rest for 5 minutes.
- After 5 minutes make equal size roundels.
- Take out one roundel and dust with some dry flour.
- Now roll it to a large circle.
- Now brush the top with some melted ghee. Dust some flour on it.
- Spread it evenly on greased layer of paratha.
- now start making plates or layers (as shown in pictures).
- once the bread is layered perfectly try to stretch it a little bit. (it won't stretch much because of wheat flour).
- Now roll the layered and pleated bread into a circle shape.
- Next, start rolling the layered circle roundel into paratha.
- Don't add any further dry flour while rolling the paratha.
- Heat a tawa or pan.
- Place the paratha on tawa.
- When the base is done little brown and golden flip it to the other side.
- Apply ghee on both sides and shallow fry till it's golden brown and evenly cooked.
- Once done perfect you can see separate layers.
- Remove from heat and serve with any curry of your choice.
