Lentil flatbread, or dal paratha, is a healthy Indian recipe made with cooked lentils and flour. This is a vegan flatbread recipe.

You can serve these high-protein ones for a healthy protein-rich breakfast or even with regular curries. Stuff some veggies and make a yummy wrap for a kids' tiffin box.
Lentil Flatbread (Dal Paratha) for Kids Tiffin Box:
This lentil flatbread or dal paratha is comfort food and an easier tiffin box recipe for your kid. If you are making this for the morning tiffin box, then my suggestion (what I also do) is to prepare dal from the night and refrigerate it. This will save a whole lot of time in busy morning hours.
You can also make the dough overnight and refrigerate it. This will also save another 10 minutes. In the morning, take out the dough, make roundels, and roll it out into flatbreads. Then, cook them with ghee or butter.

What is lentil Flatbread?
Lentil flatbread is a healthier twist to normal flatbreads. This mixture of cooked lentils and flour makes the dough for these lentil flatbreads or dal paratha. This is a simple and quick recipe. You can use your leftover cooked lentil (dal) for this recipe. This recipe has an Indian touch to it with the spices.
Is this flatbread Gluten-free?
No, this is not gluten-free since I have used whole wheat flour to bind the cooked lentils. For a gluten-free version, just soak the lentils for some hours and blend them into a smooth paste. Dilute with water. Then, pour in on a hot, greased griddle to make pancakes or crepes of batter. I have published lentil & spinach crepe recipe on the blog that are gluten-free. You can also use gluten-free flour to save some time or make lentil flour with a high-speed blender.
Type of lentil to use for Dal paratha
I have taken cooked yellow lentils (moong dal/ dehusked green gram) for these flatbreads. However, I believe you can use any cooked dal. If you have to make a powder of lentils, red lentils would be easier than other varieties.
How to Make Dal Paratha?
Ingredients -
Cooked dal - or leftover dal
Flour - Wheat flour - 3 parts + Chickpea flour - 1 part
Spices - coriander powder, chili powder, a pinch of turmeric powder, a pinch of hing (asafoetida), salt to taste, ajwain (carom seeds)
Take a large mixing bowl. Add cooked dal, wheat flour, chickpea flour, red chili powder, coriander powder, ajwain (carom seeds), salt, and oil (1 tbsp).
Mix all ingredients well. Knead to a smooth, soft dough. If necessary, add a little water for binding. Knead well.
Cover with a moist cloth for 5 minutes. Divide into equal-sized roundels. Roll them into little thick flatbreads like other parathas.
Heat the tawa and cook until it starts to puff or is just cooked with brownish patches, which are signs of cooking. Brush with ghee or butter on both sides.

Equipment
Ingredients
- ¾ cup cooked dal
- 1 cup wheat flour
- 2 - 3 tbsp chickpea flour
- 1 tsp ghee for dough
- 1 tsp red chilli powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- 1 pinch turmeric powder
- 1 pinch hing asafoetida
- ½ - 1 tsp salt check if dal also has some salt while cooked
- ¼ tsp ajwain
- water as required
- 10 - 12 tsp oil to cook paratha
Instructions
- In a large mixing bowl add dal, flour, dry spices, salt, 1 tsp oil and mix well first.
- Try to knead without adding water.
- If required, add a little water gradually kneading a smooth dough.
- Cover with a moist napkin for 5 minutes.
- Divide dough into equal portions.
- Roll them into circles like flatbreads.
- Heat Tawa and place the paratha and shallow fry till it changes colour and puffy.
- Apply ghee on both sides and flip, ensuring it is cooked equally.
- Remove once done properly.
- Serve hot with pickles or sauces/ dips of choice.
