Air fryer beets are a quick and healthy side dish, becoming tender and slightly crispy with minimal oil. Air frying enhances the natural sweetness and flavor of the beets for a tasty addition to any meal.
Beetroot is a healthy root vegetable. However, incorporating it into the daily diet is not very common. Juices or smoothies are the most common way to consume this vegetable. You can also add it to your salads. I remember my mother making beetroot pilaf (pulao) for us in childhood, and it used to always taste awesome.
However, roasted beets are always better than raw or blanched. Cooking the vegetables in the air fryer takes very little time and is so good. Perfectly roasted beetroot becomes tender and caramelized with enhanced natural sweetness plus the mellowed-down earthy flavor. The added advantage of using the air fryer is the convenience and less time.
Ingredients For Air Fryer Beets
It's a simple recipe that needs only 3 ingredients other than beetroot. The ingredients are:-
- beetroot
- olive oil
- seasoning - salt and black pepper
Additionally, you can take onion powder and garlic powder for flavor.
Instructions
Preheat the air fryer at 400 F (200 C) for 3 minutes.
Clean the beetroot and trim both ends. Scrape out the skin or peel them off using a knife or scraper.
Dice the beets into bite-sized pieces. Place them in a mixing bowl. Add the spices and olive oil to the diced beets, tossing to combine.
Transfer the seasoned beets to the air fryer basket. Start the air fryer at 400 F (200 C) for 15 minutes. If you want the beets to be more tender, add another 2 minutes. Smaller pieces will be done early. Shake once midway at 8 minutes. Remove once done. Serve immediately.
Storage Tips
You can serve them immediately or store them in the refrigerator for 5 - 6 days. Store them properly in an airtight container. To reheat, microwave them for 30 - 40 seconds. This is also freezer-friendly. You can freeze them for 2 - 3 months in a freezer bag.
How to serve air fryer beets?
Air fryer beets are versatile, and you can serve them in many ways.
Roast them with carrots and make your carrot beet soup. You can also add this to your roasted tomato red pepper soup.
Serve them as a healthy snack. Add your favorite seasoning to diced beets and drizzle a dash of lemon juice to make them even taste better.
Add the roasted beets to your salads for a tastier twist to the taste buds. E.g. chickpea salad, broccoli salad, quinoa salad, coleslaw, etc.
Add feta cheese, arugula, or spinach greens, drizzle with vinaigrette or your favorite salad dressing, and make your beet feta salad.
Make beetroot falafel or beetroot hummus with these air fryer-roasted beets.
