    Creamy Blueberry Apple Slaw | Apple Slaw

    This blueberry apple slaw with crunchy apples, shredded cabbage, carrots, almonds, and tart blueberries is a perfect side dish. This salad has a healthy dressing of yogurt and mayo with some spicy paprika.

    This is a quick coleslaw recipe that takes less than 10 minutes. My creamy blueberry apple slaw or blueberry apple salad makes an amazing side dish. It's a great way to include seasonal fruits into salads.

    The dressing here is creamy and light at the same time. Traditionally mayo dressing is used in coleslaws or in salad dressings to get a rich creamy texture.

    However, it's always a better and healthier idea to include thick curd along with little mayo. The consistency will be creamy here also. At the same time, it will much healthier than traditional once.

    Pair it up with any roasted veggies or tikka. Or serve it with any main course. I love this slaw with anything. If you are planning for any parties at home, then this is a lifesaver. Quick and delicious accompaniment.

    Ingredients to make blueberry apple slaw

    To make perfect apple slaw, you need very simple ingredients that are easily available in the pantry and if you miss any item, you will get them easily in any local supermarket. Here I have added some veggies, fruits, nuts to the slaw.

    Veggies - White and red cabbage. carrots, green onions. You may love to add other veggies like bell peppers also

    Fruits - I have added red apple, red grapes. green apple would also be great for this slaw.

    Blueberry - I have added dried blueberries here. If you get fresh ones, add the fresh ones to your slaw.

    Nuts - In this recipe, I have roughly chopped some almonds. some other variations could be walnuts, pine nuts, pecans, pistachios.

    Dressing - Mixture of thick hung curd and mayo dressing with little salt and spice makes the dish perfect.

    Dressing for Apple Slaw

    The creamy texture of these slaw comes from the mixture of curd and mayo. Replacing whole mayo dressing with more curd gives it a healthier twist. This keeps the slaw light and creamy with a hint of sweetness.

    Apple cider vinegar adds a fruity flavor to the slaw. You can also add red wine vinegar in place of apple cider. To make this little spicy, I have added peri peri sauce to the mixture and I just loved the blast of flavors in the dressing. It's creamy, tart, sweet and spicy all in one place. However, the spice is totally optional. You may skip it.

    Ingredients
      

    For slaw mix

    • 1/2 cup shredded cabbage white + red
    • 2 red apples firm & shredded
    • 1/4 cup dried blueberries
    • 1/4 cup almonds diced

    For slaw dressing

    • 1/2 cup hung curd
    • 2 tbsp mayonnaise
    • 1 tsp peri-peri sauce or paprika
    • Salt to taste
    • 1 tsp apple cider vinegar or red wine vinegar
    • 1 tsp dijon mustard
    • 1 tsp honey

    Instructions
     

    • In a mixing bowl or jar, mix all ingredients of the dressing.
    • Add all ingredients in a large bowl.
    • Pour in the dressing.
    • Mix them all nicely. Adjust salt as per taste.
