Creamy Blueberry Apple Slaw
This salad has cabbage, apples, blueberries, other dried fruits and nuts, and a creamy dressing. The dressing here is creamy but lighter also. Traditionally, mayonnaise dressing is used in coleslaws or salad dressings to get a rich, creamy texture.
However, thick Greek yogurt and a little mayo are always better. To make it even healthier, eliminate mayonnaise completely. The consistency will also be creamy here, and it will be much healthier than traditional ones. For vegans, use vegan yogurt.
Ingredients To Make Blueberry Apple Slaw
Simple ingredients are readily available in the pantry to make perfect apple slaw. If you miss any item, you can easily get it in any local supermarket. I have added some veggies, fruits, and nuts to the slaw.
Veggies: Green and red cabbage are the main ingredients. You can add other variations of cabbage, like Nappa cabbage and Chinese cabbage. Apart from cabbage, add shredded carrots and green onions. You may also love to add some sliced bell peppers.
Fruits: I have added red apples and red grapes. Granny Smith apples would also be great for this slaw. Use a mixed variety of apples.
Blueberry: I have added dried blueberries here. If you get fresh ones, add them to your slaw. Fresh blueberries pair best with this dish.
Nuts: I have added slivered almonds to this salad. Other variations include walnuts, pine nuts, pecans, and pistachios. Nuts add crunch to the slaw.
Dressing: The dish is perfect with a mixture of Greek yogurt and mayo (half and half) dressing, a little salt, and spices.
Dressing for the Blueberry Apple Coleslaw
½ Greek yogurt + ½ Mayonnaise - Vegan substitute with vegan yogurt
Apple Cider Vinegar - substitute with red wine vinegar
Dijon mustard
Honey or maple syrup
Hot sauce - Substitute smoked paprika or cayenne pepper

How to make the slaw?
In a mixing bowl, add the ingredients, such as yogurt, mayonnaise, ACV, hot sauce, dijon mustard, honey, or maple syrup. Season with salt and pepper to taste. Mix to make a smooth and creamy sauce.
Chop the veggies and fruits into desired pieces. Cut the nuts into small pieces. Slice or shred the cabbage, carrots, etc. Add them to a large mixing bowl. Pour in the creamy sauce and mix them gently and thoroughly.
How to serve apple slaw?

For slaw mix
- ½ cup shredded cabbage white + red
- 2 red apples firm & shredded
- ¼ cup dried blueberries
- ¼ cup almonds diced
Instructions
- In a mixing bowl or jar, mix all ingredients of the dressing.
- Add all ingredients in a large bowl.
- Pour in the dressing.
- Mix them all nicely. Adjust salt as per taste.
