    Instructions

    Prepare Buffalo Cauliflower -

You can simply take roast the cauliflower in an oven or in an air fryer. Or, add buffalo sauce for spicy cauliflower tacos.

Preheat the air fryer at 400 F. And, if using an oven, then also preheat at 400 F.

Clean the cauliflower and break it into bite-sized florets. Prepare the batter with flour and cornstarch and seasoning of salt and cayenne pepper. On another plate take panko crumbs along with some seasoning added. Take florets one by one. Dip it in the batter and then on bread crumbs to coat.

Place it on the air fryer basket and spray some oil from the top. Place it in the air fryer and start at 400 F for 10 minutes flipping the midways. Coat it with buffalo sauce (vegan) and again place it inside the air fryer and cook for 2 - 3 minutes more.

If making in oven, roast it for 22 minutes. Then coat with buffalo sauce and then again for 5 minutes.

    Prepare salsa -

Here I'm using salsa with chopped mangoes. However, you can also change your toppings of choice. You can also substitute this with store brought taco sauce (which is nothing more than salsa, but may save some time when in hurry). I prefer to make it at home.

    Prepare cabbage slaw -

I love my taco with crunchy bites of red cabbage and red onions. Make slices of them nicely. Alternatives are lettuce or slaw mix. Shred the cabbage thinly. Slice onions. If serving them immediately, you can add salt and lemon juice to it. For meal prep, you can refrigerate the slaw (without salt) for up to 3 days. Dice mangoes and avocado in small chunks.

    Prepare topping sauce -

Here I'm using yum yum sauce (vegan). Other alternatives are cilantro crema, creamy chipotle sauce, peri-peri sauce, avocado dressing, or whatever suits you.

Yum yum sauce - Mayonnaise (or vegan mayonnaise) + tomato ketchup + paprika + garlic powder + onion powder + butter ( or vegan butter) + water

Avocado Cilantro Lime Crema - Avocado (or raw cashew (soaked) + cilantro + lime juice + jalapeno (deseeded) + salt + garlic + water

Assemble to make buffalo cauliflower tacos

Take soft tortillas (corn tortillas or flour tortillas) and heat slightly on direct flame for 1 - 2 minutes. Flip using a tong. You can also heat them up on a skillet.

Now place the tortilla on taco holders or arrange it on a plate. Add the toppings, slaw, diced mangoes/ avocado slices, chopped jalapeno, and chopped cilantro leaves. Now drizzle the yum yum sauce or any favorite sauce on top. Delicious spicy buffalo cauliflower tacos are ready to serve.
