Are Mushrooms and bell peppers keto-friendly?
A Mushroom is the fleshy, spore-bearing fruiting body of a fungus. This is low in calories and fat. And also cholesterol-free. At the same time, it contains a good amount of fiber, vitamins, and minerals. The whole mushroom contains 92% water.
This is one of the best low-carb vegetables for the keto diet. So, if you are wondering, "Is mushroom keto-friendly?" The answer is yes, you can. And this is one of the best, like cauliflower, broccoli, and other keto veggies. Bell Peppers are also low in carbs and perfect for the keto diet.
How to Make Keto Mushroom Pepper Stir-Fry?
Ingredients:
Mushrooms - I have used regular button mushrooms here. You can add different varieties to the stir fry. Mushrooms contain high water content and release water while cooking.
Peppers - I have used yellow, red, and green bell peppers for this recipe. These are good, and add crunchy bites to the dish. You can skip any of them if unavailable.
Herb - Rosemary and basil are my favorite herb combinations. You can try any of your favorite herbs. Fresh herbs are better, but you may replace them with dried ones anyway.
Onion and garlic - These are the basic ingredients. I have added very little onion since this is a keto diet recipe. If you are not following keto, you may add more onions to this mushroom pepper sauteed.
Seasoning - Here I have kept this simple with salt, pepper, cayenne pepper, and paprika. You can play around with other ground spices as well.
Instructions:
Saute onion, garlic, and green chilies for a minute. Add chopped mushrooms and saute on high flame for 4 - 5 minutes.
Add salt, pepper, cayenne pepper, and paprika, and gently stir. Then add peppers and stir fry for 3 - 4 minutes more on medium heat. Keep stirring in intervals. Keto mushroom pepper stir-fry is ready in 10 minutes.
*Note: If you keep the flame low, it will release more water. But a high flame and stirring at intervals help to evaporate the excess water, and you will get crispier mushrooms instead. Stir-frying is done on high heat and yields crunchier veggies.

- 500 gms Mushrooms
- 1/2 Yellow Bell Pepper
- 1/2 Red Bell Pepper
- 1/2 Green Bell Pepper
- 1 sprig Rosemary
- 1/2 Onion
- 2 - 4 Garlic pods
- 2 Green Chillies
- Salt to taste
- 1/2 tsp Black Pepper Powder
- 1 tsp Paprika
- 1/2 tsp Cayenne Pepper
- 2 tbsp Olive oil
- 2 tbsp Green Onions
Instructions
- Heat oil in a pan.
- Saute onion, garlic and green chillies for a minute.
- Add chopped mushrooms and rosemary.
- Cook on medium to high flame for 5 minutes.
- Mushrooms will release a lot of water and will get cooked in it.
- Cook till all water evaporated and mushrooms are tender.
- Keep stirring in between.
- Add all bell peppers and all the spices (mentioned above in the ingredients list).
- Give them a nice stir.
- Cook for another 5 minutes on medium to high flame.
- Mushroom pepper Fry is ready.
- Garnish with some green onions or cilantro leaves.
