Mushrooms are one of the superfoods with lots of health benefits associated with this. I'll surely share another post on why mushrooms are a superfood.
Mushroom is basically the fleshy spore-bearing fruiting body of a fungus. This is low in calories and fat. And also cholesterol-free. At the same time, it contains a good amount of fiber and lots of vitamins and minerals. The whole mushroom contains 92% water.
This is one of the best low-carb vegetables if you are following the keto diet. So if you are wondering "is mushroom keto-friendly?" "can I eat mushrooms on the keto diet?" the answer is yes 100% you can. And this is one of the best like cauliflower broccoli and other keto veggies.
In this recipe for keto mushroom pepper stir-fry, there is another keto-friendly vegetable, i.e. peppers. Bell Peppers are also low in carbs and perfect to eat in the keto diet.

How to Make Keto Mushroom Pepper Stir-Fry?
Ingredients:
Mushrooms - Here I have taken regular button mushrooms. You can add different varieties to the stir fry. Mushrooms contain high water content and release water while cooking.
Peppers - For this recipe, I have taken yellow bell peppers, red bell peppers, and green ones. These are good and add crunchy bites to the dish. You can skip any of them if unavailable.
Herb - Rosemary and basil are the best combinations for me. You can try any of your favorite herbs. Also, fresh ones will be better but you may replace them with dried ones anyways.
Onion & Garlic - These are the basic ingredients. I have added very little onion since this is a keto diet recipe. If you are not following keto then you may add more onions to this mushroom pepper sauteed.
Spices - Here I have kept this simple with salt, pepper, cayenne pepper, and paprika. You can play around with other ground spices as well. To make it spicy I have added green chilies also. However, this is optional.
Other variation - To give it an Indian flavor, add ground cumin, coriander, red chili powder, turmeric powder, and all spices.
Instructions:
Saute onion, garlic, and green chilies for a minute. Now add chopped mushrooms and saute on high flame for 4 - 5 minutes.
*Note: If you keep the flame low, it will release more water. But with high flame and stirring at intervals helps to evaporate the excess water and you will get crispier mushrooms instead. However, you may choose to cook on low flame and cover with a lid at the same time. Then increase the heat and get rid of excess water. That is the difference between stir-fried and sauteed mushrooms. Stir-frying is done on high heat and yields crunchier veggies.
Add in salt, pepper, cayenne pepper, and paprika, and give a nice gentle stir. Then add peppers and stir fry for 3 - 4 minutes more on medium heat. Keep stirring in intervals. Keto mushroom pepper stir-fry is ready in 10 minutes.

Keto Mushroom Pepper Stir-Fry

Ingredients
- 500 gms Mushrooms
- 1/2 Yellow Bell Pepper
- 1/2 Red Bell Pepper
- 1/2 Green Bell Pepper
- 1 sprig Rosemary
- 1/2 Onion
- 2 - 4 Garlic pods
- 2 Green Chillies
- Salt to taste
- 1/2 tsp Black Pepper Powder
- 1 tsp Paprika
- 1/2 tsp Cayenne Pepper
- 2 tbsp Olive oil
- 2 tbsp Green Onions
Instructions
- Heat oil in a pan.
- Saute onion, garlic and green chillies for a minute.
- Add chopped mushrooms and rosemary.
- Cook on medium to high flame for 5 minutes.
- Mushrooms will release a lot of water and will get cooked in it.
- Cook till all water evaporated and mushrooms are tender.
- Keep stirring in between.
- Add all bell peppers and all the spices (mentioned above in the ingredients list).
- Give them a nice stir.
- Cook for another 5 minutes on medium to high flame.
- Mushroom pepper Fry is ready.
- Garnish with some green onions or cilantro leaves.
