Lauki raita is a yummy tangy flavorful condiment that is best served as a side dish in Indian cuisine. This recipe belongs to the Northern part of the country.
Raita is a savory preparation from curd. This is an easy and quick side dish that completes our menu. You can make raita from any vegetables and fruits. Some raita is savoury and tangy where as many fruits raita are sweet and sour.
Lauki raita is a combination of lauki or bottle gourd and whisked curd. This is a variation of the regular raita. Serve this as a side dish to any meal, pulao, biryani, etc.
This is a no onion no garlic recipe and perfect for fasting recipe. You can make this as a side dish for your Navratri Vrat Recipes like sama rice khichdi.
How to make lauki raita?
This is an easy raita that requires a few ingredients and takes less than 15 minutes.
Peel the skin and wash thoroughly. Grate lauki or bottle gourd with help of a grater. Add 1 cup water to the grated lauki in a bowl and boil it for 5 - 7 minutes. Then, strain out water and wash it with cold water.
Squeeze out excess water and roughly grind lauki in a blender. Add lauki, chopped coriander leaves, green chillies, roasted cumin powder, red chilli powder, black salt, and rock salt to whisked curd. Mix them well. Lauki raita is ready.

- 1 cup grated bottle gourd/ lauki 1/2 small size bottle gourd
- ½ tsp cumin seeds
- 1 cup thick curd
- ½ tsp salt black salt or rock salt
- 1 green chilli (optional)
- 1 tsp coriander leaves Finely Chopped
Instructions
- Peel off the bottle gourd and wash.
- Grate the lauki using a cheese grater.
- Transfer grated lauki to a saucepan and add 1 - 1.5 cups of water.
- Bring it to a boil and then simmer for 5 - 7 minutes.
- Remove from heat.
- Strain them with the help of a colander and let it cool for some time.
- Transfer to a blender jar along with curd.
- Whisk once or twice to blend to a coarse mixture. You can make fine paste too.
- Take out the curd and lauki mix to a mixing bowl.
- Add roasted cumin powder, chili powder, chopped green chilies, chopped cilantro leaves, and salt to taste.
- Mix them well.
- Dilute with more water if require a thinner consistency
