Lauki Raita
Lauki raita is a healthy and yummy side dish made with lauki (bottle gourd) and curd flavored with a few spices.

Ingredients

grated bottle gourd/ lauki
½ small size bottle gourd
½
tsp
cumin seeds
1
cup
thick curd
½
tsp
salt
black salt or rock salt
1
green chilli
(optional)

tsp
coriander leaves

Instructions
Peel off the bottle gourd and wash.
Grate the lauki using a cheese grater.
Transfer grated lauki to a saucepan and add 1 - 1.5 cups of water.
Bring it to a boil and then simmer for 5 - 7 minutes.
Remove from heat.
Strain them with the help of a colander and let it cool for some time.
Transfer to a blender jar along with curd.
Whisk once or twice to blend to a coarse mixture. You can make fine paste too.
Take out the curd and lauki mix to a mixing bowl.
Add roasted cumin powder, chili powder, chopped green chilies, chopped cilantro leaves, and salt to taste.
Mix them well.
Dilute with more water if require a thinner consistency
