If you want a quick and easy side dish, try this aloo parwal stir fry. These are delicious with a crunch of parwal, aka pointed gourd.

Aloo parwal stir fry is an easy side dish. This recipe is simple and takes less than 15 minutes to cook. Parwal, or pointed gourd, is abundantly available during summers. You can only make parwal fries or add potatoes. Since potatoes are best paired with vegetables, they enhance the dish's taste. If you like parwal, check out my parwal masala recipe.
Aloo Parwal Stir-fry
Ingredients
Parwal (pointed gourd) and potatoes
Onions, minced garlic, green chilies
Spices - cumin seeds, coriander powder, cumin powder, turmeric powder, red chili powder, hing, and salt to taste
Oil - any vegetable oil or mustard oil
Garnish - coriander leaves finely chopped
Preparation
While chopping parwal, I don't scrape out the outer skin of this vegetable. The layer is thin and edible. Also, the skin makes the vegetable a little crunchy outside. Still, if you don't like the skin, you can scrape them with a knife. Don't use the peeler to peel of the skin. Cut the pointed gourd vertically, making slices.
Instructions -
Heat oil in a pan. Add cumin seeds and let them splutter. Add garlic and green chilies. Now, add sliced onions and saute for a minute. There is no need to brown the onions. Add sliced parwal and saute on medium-high flame for 3 - 4 minutes.ย Stir occasionally.
Add potato wedges. Season with salt. Give it a nice stir. Cover with lid and saute on medium to low flame for 5 - 7 minutes or till both are cooked.ย Then, add all dry spices and saute for 3 - 4 minutes on medium flame. Turn off the heat and add chopped cilantro leaves. Serve hot with roti or chapati or with dal rice.
Aloo Parwal Fry In The Air Fryer
Chop the vegetables and place them in a large mixing bowl. Add the seasoning and spices, followed by a tsp of ginger-garlic paste. Then drizzle 2 tsp olive oil. Give it a gentle stir, coating the veggies with the spices.
Preheat the air fryer at 400 degrees F (200 degrees C) for 3 minutes. Then, transfer the seasoned veggies to the air fryer basket. Start the air fryer at 190 degrees C (375 degree F) and cook for 12 - 13 minutes. Shake them internally and keep an eye after 10 minutes. Since every air fryer cooks differently, the timing may vary by 1 - 2 minutes. The timing also depends on the doneness you want.
