Aloo Parwal Stir Fry
This is an easy vegan side dish. In this dish, sliced potatoes and parwal are seasoned with aromatic spices and then cooked until done. This is gluten-free as well.

Instructions
Heat oil in a pan, Add cumin seeds and let it splutter.
Add garlic, green chillies. Add sliced onions and saute for a minute.
No need to brown onions. Add sliced parwal and saute on high flame for 3 - 4 minutes.
Stir occasionally.
Add potato wedges. Season with salt. Give it a nice and gentle stir.
Cover with lid and saute on medium to low flame for 5 minutes or till both cooked.
Add all dry spices and saute for another 2 - 3 minutes on medium flame.
Then turn off heat and add chopped cilantro leaves.
Serve hot with roti or chapati or with dal rice.
Air Fryer Instructions
Chop the vegetables and place them in a large mixing bowl.
Add the seasoning and spices, followed by a tsp of ginger-garlic paste.
Then drizzle 2 tsp olive oil.
Give it a gentle stir, coating the veggies with the spices.
Preheat the air fryer at 400 degrees F (200 degrees C) for 3 minutes.
Then, transfer the seasoned veggies to the air fryer basket.
Start the air fryer at 190 degrees C (375 degree F) and cook for 12 - 13 minutes. Shake them internally and keep an eye after 10 minutes.
Since every air fryer cooks differently, the timing may vary by 1 - 2 minutes. The timing also depends on the doneness you want.
