Air fryer roasted potatoes are easy and simple diced potatoes that are roasted simply and quickly in the air fryer. One of the best ways to make potatoes. These are just delicious, crispy, and absolutely irresistible.

I love my air fryer the most when I make my potatoes. Let that be potato wedges, hash browns, fries, tater tots, or even baked potatoes. These air fryer diced potatoes or roasted potatoes were always my favorite snacks and I make them for sides also. Check out my skillet fried potatoes recipe.
You can anyways make roasted potatoes in the oven too. But the air fryer has made this simpler. The air fryer works in a similar way to an oven and cooks food with hot air. But since these are compact in size and a high-speed fan speeds up the process of cooking. And you don't need to heat up the whole room in the summer but still can enjoy roasted vegetables and many more with these air fryers.
Air Fryer Roasted Potatoes
These are the easiest air fryer potatoes. You don't need to do a lot of preparation for this. So if you end up with some unplanned parties to host or some extra guests, then just make these quick roasted potatoes for appetizers or even as yummy crispy side dishes. And serve them with delicious dips of your choice. I do that most often for my cocktail parties.
These are so good to serve in your quick breakfast menu or even as a side for lunch or dinner. Air fryer roasted potatoes are so versatile, you can add them to any menu without having a second thought. And it takes hardly 15 minutes to cook and 2 - 5 minutes of chopping. That's all. A delicious roasted potato dish is ready.
Which potatoes are best for these roasted potatoes?
Any potatoes are great for this recipe. However, I love to make the roasted potatoes with baby potatoes. For baby potatoes, yukun gold, keep the skin on. If using russet that has a thicker skin you may peel off the skin. If using baby potatoes, you can halve them. Or if using regular potatoes, dice them into bite-sized pieces.
Ingredients you will need -
Potatoes - I have taken baby potatoes here. You can take regular big potatoes also. Dice them into pieces before soaking them in cold water.
Seasonings - garlic powder, cayenne pepper, salt and pepper
You can choose any of your favorite seasonings/ dried herbs. My favorites are Italian herb seasoning, cajun seasoning, etc. A simple seasoning of garlic powder with salt and pepper also tastes great.
Oil spray - avocado oil or olive oil
How to make roasted potatoes in the air fryer?
Clean the potatoes thoroughly. Cut it into halves or more if taken medium size potatoes. Keep the skin on since it will hold on to the shape and makes the bite of potatoes crispier.
Wash the potatoes once after chopping too. This will remove starch and make the potatoes crispier. Keep it in ice or chilled water for some time to make them crispier. After 15 - 20 minutes remove the potatoes from the water and pat dry lightly with a dry kitchen towel.
Transfer the potatoes to a mixing bowl. Add oil followed by the seasonings. Mix them well.
Now transfer the seasoned potatoes to the air fryer basket. Set the air fryer at 400F or 200C for 12 minutes. Pause and shake in the half at the 6-minute mark. If required spray a little more oil now. This will give a nice brown color to the roasted potatoes.
How to store leftovers and reheat them?
Once completely cooled, transfer to an airtight container with a lid. It stays good for 3 - 4 days. To reheat, transfer to the air fryer basket and start at 400F for 2 - 3 minutes or till warm enough.
Extra Tips For Best Air Fryer Potatoes
- Add any seasoning of choice. You can also add some fresh/ dried herbs for a more intense flavor.
- Preheating is not compulsory, but this reduces the time by 2 - 3 minutes or so. But if your air fryer brand says preheating is not necessary for your air fryer, then ignore this step.
- Don't overload the basket. It cooks more uniformly if arranged in a single layer.
- If you are making in batches, reduce the time by 2 minutes from the 2nd batch onwards as it tends to cook a little faster after the 1st batch.
- Every air fryer is different. So a difference in time is possible by 2 - 4 minutes. But the standard time is 10 - 14 minutes for roasted potatoes.
- For baby potatoes, you don't need to take off the skin. Also for Yukon gold and white or red potatoes. If you are using russet which has thicker skin you may like to take them out or keep it for a crispy skin with soft potatoes.

So once you dice the potatoes, wash them off in fresh water and then soak them in cold water for 20 - 30 minutes.

Yes. You can make them completely oil-free as well. But a little oil adds to the golden brown color and is crispier too. However, with an air fryer, it's easier to crisp them up. To make the air fryer potatoes completely oil-free, substitute oil with broth. Add broth to the seasonings and rub them well on the potatoes. This will help in adding a nice flavor and equally crisp up the potatoes.
Are these air fryer roasted potatoes vegan?
Yes. These roasted potatoes are completely vegan. However, if you are not vegan, you can also coat the potatoes in garlic butter coating halfway.

- 1 lb baby potatoes (or 4 - 6 medium size potatoes)
- 1 tbsp olive oil
- ยฝ tsp salt (to taste)
- ยฝ tsp cayenne pepper optional
- ยฝ tsp garlic powder
Instructions
- Preheat the air fryer at 400 F for 3 - 4 minutes.
- Wash and clean the potatoes.
- No need to remove the skin.
- Cut the baby potatoes into halves (and large potatoes into bite-sized pieces).
- Place them in a mixing bowl.
- Now add oil, salt, garlic powder, cayenne pepper to the bowl of potatoes.
- Toss to mix all well so that potatoes are nicely coated with spices/ seasoning.
- Now transfer the seasoned potatoes to the air fryer basket.
- Place the basket inside and cook at 400 F for 12 minutes.
- Toss them in mid ways at 6 minutes mark.
- For extra crispy skin, increase the timer for 2 more minutes.
