Vegan mashed potatoes are primarily known as aloo chokha in India. This is one of the most popular dishes in many states in India. Indian mashed potatoes are a quick, dairy-free, and gluten-free dish. They are the best sides for a quick dinner.
Usually, mashed potatoes are simple, creamy ones with lots of fats added to them. But when we talk about mashed potatoes in Indian style, it's more of spices we add into it. There are many ways to make vegan mashed potatoes in Indian style.
In the Indian way, mashed potatoes are cooked in many ways, and most are vegan only as we use only ghee as a dairy product. But to make them vegan, replace ghee (melted butter) with any vegetable oil.
Some mashed potato recipes are simple and use a few spices to flavor them. Both ways, it tastes great. Potatoes are versatile vegetables that blend well with any vegetable and any spices.
Other Variations:
Simple mashed potatoes: This has no other spices than salt, raw onion, green chilies, and mustard oil.
Spicy mashed potatoes: - In this recipe, First saute onion, cumin seeds/ mustard seeds, ginger-garlic, and all ground spices. Then add boiled and mashed potatoes to it. This is a spicier mashed potato that is great to serve as a companion for Indian Poori (poori Bhaji), to stuff in masala dosa, uttapam, or stuff in a bread slice and make your potato sandwich.
Simple sauteed mashed potatoes (Vegan): Put the mashed potatoes in a bowl. Prepare a tempering with oil/ ghee, cumin seeds/ mustard seeds, sliced onions, crushed garlic, and green chilies. Keep on low heat as it may burn on high heat. When the onions are translucent, add the oil-tempered mashed potatoes. Season with salt.
Mashed potatoes for Fasting Days: You may not find this particular recipe on my blog as I felt it was really simple. And this is not normally vegan as pre-ghee (melted unsalted butter is used). Add cumin seeds and let them splutter. Then add mashed potatoes and add only rock salt and black pepper powder. Many don't eat cumin seeds on fasting days (like my family).
How to make mashed potatoes in Indian Style?
This is one of the easiest side dishes in Indian cuisine. This is quite popular in many parts of the country. To make these simple Indian-style mashed potatoes, boil them nicely until they turn soft and fluffy. You can use a pressure cooker (manual or electric) to cook the potatoes.
Peel off the skin and mash the potatoes nicely when cooled to room temperature. Add finely chopped onions, green chilies, cilantro leaves, and salt to the potatoes. Drizzle some raw mustard oil over them and mix them well. Now, it's ready to serve.

Ingredients
- 4 medium potatoes
- 1 small onion finely chopped
- 2 garlic pods
- 1/2 tsp salt
- 1 tbsp mustard oil
- 1 green chilli finely chopped
Instructions
- Pressure cook potatoes for 4 whistles or till its cooked.
- Then open the lid when pressure released.
- Now peel off skin of potatoes.
- Put them on a plate or mixing bowl.
- let if cool for some time.
- Mash potatoes with a masher.
- Now add finely chopped onion, green chillies, salt and mustard oil.
- Give it a nice stir.
- Indian aloo chokha is ready.
