A rich creamy sweet potato and tomato soup is a yummy flavorful soup for chilly days of winter and fall. This takes less than 30 minutes to prepare this delicious soup.
Sweet Potato and tomato with dry-roasted peanuts, a heavenly combination all together. If you love hot soups you will just love this version. You will get the earthy flavors of sweet potato, and the tanginess of tomatoes. Add seasoning of your choice or keep it simple with onion, garlic, salt, and pepper only.
Sweet potatoes are a healthier substitute for potatoes and make the soup creamier. It has the natural sweetness of the sweet potatoes and the sourness of tomatoes balances them all. They are good for our health because of their high nutrient value.
This soup was so delicious. I had never thought of adding sweet potatoes to the tomato soup before I made this sweet potato soup.
Sweet Potato And Tomato Soup
This sweet potato tomato soup is an easy soup that takes less than 30 minutes to prepare. You can make the soup with roasted sweet potatoes or simmer it in broth till tender. Then add tomatoes and blend them using a hand blender. For garnish use some crunchy peanuts and some herbs.
Ingredients
Sweet potatoes - this makes the base of the soup
Tomatoes - fresh tomatoes
Carrots - 1 small - optional
Onions - substitute with onion powder
Garlic cloves - fresh is better. can substitute with garlic powder
Vegetable broth - or broth bullion powder
Seasoning - oregano or Italian seasoning or dry herbs, cayenne pepper or chili flakes, salt, and pepper to taste
Fresh herbs - basil leaves
For Garnish - fresh basil finely chopped, roasted peanuts, chili flakes
Instructions
In a large soup pot heat oil. To the hot oil add minced garlic, and diced onions, and saute till the onions are translucent. Then add diced sweet potatoes to the pan followed by salt and the seasonings. Cook on high flame for 2 minutes for a charred flavor.
Then add diced tomatoes or roasted tomatoes (fresh or canned) to the pot. Add vegetable broth and simmer for a few minutes like 10 - 15 minutes or till sweet potatoes are cooked tender. Add fresh herbs and blend to a puree using a hand blender.
In the same pot simmer for a few more minutes. In the end, turn off the heat. Add 2 - 3 tbsp coconut cream and stir well to mix them well. However, this is optional and you can skip the cream. Add some topping of fresh basil leaves, roasted peanuts, and a drizzle of olive oil over them. For a kick of heat, add a pinch of red pepper flakes to it.
Variations To Sweet Potato Tomato Soup
You can roast the veggies together in a baking dish. Add seasonings and drizzle olive oil to them. Roast the veggies in a preheated oven for 25 minutes at 400 F. Then transfer to a blender and blend this to a smooth puree. Pass it through a sieve and simmer in a large pot for 2 - 3 minutes. Then add the coconut milk and the toppings if any. Creamy sweet potato tomato soup is ready to serve.
