Thai sweet and chilli sauce is a fantastic, easy-to-make dip and a flavorful, tangy-sweet condiment made with red chilies, garlic, vinegar, and sugar.

It is popular in Thai cuisine and perfectly balances heat and sweetness to snacks, stir-fries, and grilled dishes. This Thai sweet and chilli sauce is one of the best dips and complements the snack menu. This is a healthier version of the regular store-bought ones.
I used jaggery instead of white sugar to give the dip a healthier twist, and I loved this version even more. This is a vegan dip recipe, so I replaced fish sauce with soy sauce. You can also skip that. The main ingredients in this recipe are rice vinegar (or white vinegar), garlic, chilies, and jaggery (or white sugar).
Some people prepare this with honey as a natural sweetener. I have used powdered dry Kashmiri red chilies and red pepper flakes. You can also add ready-made chili paste, which is available in the market. Read about other vegan dips on the blog.
How to make Thai sweet chili sauce?
Preparing this dip is very easy and takes only a few minutes. You can control the amount of sweetness and heat.

Soy sauce - for umami flavor
Vinegar - preferably rice vinegar
Heat - red chilli paste/ or chilli powder + red pepper flakes
Garlic - garlic powder or fresh minced garlic
Salt to taste
Water
Oil - refined vegetable oil
Cornstarch - to thicken the consistency
Instructions:-
In a saucepan, heat water, add jaggery, and simmer until the jaggery melts. Meanwhile, heat a pan. Add 1 tbsp oil and saute garlic until it changes color.
Then add the red chili paste and saute for a few seconds. Add soy sauce and rice vinegar. Then add the jaggery syrup to the pan and simmer for 3 - 4 minutes. Add cornstarch slurry and simmer until desired consistency.
Remove from heat and taste the sauce. Add a pinch of salt to balance the flavors. Don't simmer until very thick; the sauce will thicken when cooled down to room temperature.
