Paneer bhurji is an easy and quick high-protein dish perfect for any meal. You can serve it for breakfast with bread slices, toast, or flatbreads for lunch or dinner. This is one of the protein-rich foods for vegetarians. However, you can check out my scrambled tofu recipe if you are vegan.
What is paneer bhurji?
Paneer bhurji is made with crumbled paneer or cottage cheese and sauteed with onion, garlic, tomatoes, and aromatic spices. This is an easy recipe and takes only 10 minutes to prepare. Paneer bhurji goes best with roti or paratha. This will also be a healthy and protein-rich breakfast. Paneer bhurji, a scrambled paneer, is a vegetarian replacement for scrambled eggs.
How to serve?
Apart from the basic ways to serve it with flatbreads like roti and paratha, there are a few other interesting ways to serve it.
This blog also has a recipe for Veg Mughlai Paratha: a paneer bhurji stuffed paratha. This recipe is slightly different from the normal paneer paratha. So, if you have leftover paneer bhurji, you can try adding some variations.
You can also serve it as a sandwich with two slices of bread. My paneer cheese sandwich is an almost similar recipe and makes a hearty breakfast.
There is another way to serve this bhurji. Wrap it in roti or chapati and serve it as paneer frankie. This is best for kids or adults with no time for a meal.
How to make paneer?
You can use store-bought or homemade paneer for this recipe. I love homemade paneer for any of my paneer recipes. However, if you use store-bought (pressed) ones, you must grate or crumble them roughly with a fork or spoon.
Making paneer at home is the most straightforward job. Read my recipe for how to make paneer at home. But the main advantage is that you don't need to keep it pressed for long. Once the milk curdles completely, strain it with a cloth and hang it for 5 minutes. That's all to remove any excess liquid after squeezing the liquids.

How to make scrambled cottage cheese?
Crumble paneer or grate with the help of a cheese grater. Or make paneer at home by curdling the milk.
Heat oil or ghee (clarified butter) in a pan. Add cumin seeds and let it crackle. Now add chopped ginger, garlic, and onions. Saute till translucent.
Then add chopped tomatoes and cook until they are a little soft. If you want more veggies, you can add some green peas here. Add all the spices (coriander powder, turmeric powder, red chili powder, cumin powder) and a little water. Mix and saute for 1 - 2 minutes.
Now add chopped bell peppers and saute. Then add crumbled paneer. Mix it well. The paneer will start releasing some moisture. Let it simmer until dry.
Garnish with freshly chopped coriander leaves. Serve hot with slices of bread (roti, paratha, naan, etc.) or soups and stews.
