Rice - Long grain rice is the best one for this Spanish rice. You can also use brown rice but the timing will be a little late. You can also use Jasmin rice.
Tomatoes - Tomatoes add a distinct flavor to the rice. You can take chopped tomatoes and tomato puree. Salsa is a great option since it makes the rice more delicious.
Jalapeno - Spanish rice is spicy. The jalapeno adds more flavor and heat to the rice. If you don't like spicy food, reduce the amount of jalapeno and remove the seeds.
Vegetable Broth - Traditionally this rice is made with chicken broth. However, for a vegetarian or vegan Spanish Rice use vegetable broth. Water won't make this rice that flavorful.
Spices - Common spice we use here are cumin powder, chili powder, salt. You can also add paprika to the rice.
How to make Spanish Rice in an Instant Pot?
Start the instant pot on saute mode. Add oil to the inner pot once it's hot. Add onion, garlic, and jalapeno. Saute for 15 - 20 seconds, No need to make them brown or translucent.
Add rinsed rice. And saute for 2 minutes. Then add the spices and vegetable broth. Give them a nice stir while deglazing the pot. Then add salsa and don't stir them.
Cancel the sauté function. Close the lid and seal the venting knob. Start the IP on manual pressure cook mode for 4 minutes on high pressure. After it's done and beep, let it be on natural pressure release for 4 - 5 minutes. Then release pressure for the rest and open the lid.
Fluff the rice by mixing salsa and add lots of finely chopped fresh cilantro leaves.

- 1 jalapeno seeds removed and finely chopped
- 1/2 cup salsa
- 1 tsp cumin powder
- 1 tsp chili powder
- salt to taste
- 1/4 cup cilantro leaves finely chopped
Instructions
- Start the instant pot on saute mode.
- Add oil to the inner pot once it's hot.
- Add onion, garlic, jalapeno.
- Saute for 15 - 20 seconds. No need to make them brown or translucent.
- Add rinsed rice. And saute for 2 minutes.
- Then add the spices, vegetable broth and give them a nice stir deglazing the pot.
- Then add salsa and don't stir them.
- Cancel the sauté function.
