Make creamy vegan mashed potatoes with fewer ingredients and simple steps. This is vegan, gluten-free, and a delicious side dish.

    vegan mashed potatoes

Mashed potatoes are a popular side dish that is perfect to serve on Thanksgiving, Christmas, Easter, or even at any parties and get-togethers. Mashed potatoes dish is a creamy, buttery potato dish. Traditional mashed potato has lots of butter, heavy cream added to it which ultimately makes them fluffy and yummy.

However, this vegan mashed potato is fluffy too. And this is dairy-free also. Here I have added minced garlic to these mashed potatoes for a garlicky flavor. This simple recipe is free from any fat like cream, butter, and hence this is a healthy recipe as well. Also, read my other vegan mashed potatoes in Indian style and perfect instant pot mashed potatoes recipe here.

Potatoes are more carb when they are fried than those when steamed, boiled, or roasted. So the boiled potatoes of this dish are less of carbs (as compared to fried potatoes) and more of protein, fiber, and other nutrients. Read my other vegan potato recipes here.

How to make vegan mashed potatoes?

This is an easy and simple side dish that takes less than 30 minutes for a large batch size also. Just boil the potatoes, mash and mix simple ingredients. But make sure to mash potatoes nicely. Use cheese grater or potato masher for an uniformity. I prefer my potato masher for this.

    Ingredients -

Potatoes - Yukon gold potatoes or starchy russet potatoes works best for the recipe. Yukon gold yields perfect creamy and buttery mashed potatoes and better than those of russet potatoes. But many prefer russet potatoes also for this recipe. However, you can also take a mix of them as well.

Garlic - For extra raw garlicky flavor, take 2 pods and mince or crush them.

Salt & pepper - Salt and pepper are the essential ingredients and the only spices we are using here.

Non-dairy milk - Here I have taken almond milk to add to the mashed potatoes. You can also add oat milk, soy milk, or other plant milk.

Olive oil - add extra virgin olive oil to the mashed potatoes.

Fresh Herbs - Take freshly chopped parsley or cilantro or chives to add and garnish to the mashed potatoes.

Chilli / Spice - If you want it little spicy, take chilli flakes or a pinch of paprika will do good.

    Instructions:

    Step 1 - Boil Potatoes -

Peel the potatoes and dice into quarters. Immerse the potatoes in a bowl of water in a pot and boil. Boil it till it's tender and cooked well. Once cooked, remove from heat, strain out using a colander. Let it air-dry and cool naturally for some time.

    Step 2 - Mash the potatoes -

Now when potatoes are cooled down, mash them completely using a potato masher or a grater. give them a nice stir ensuring proper mashing of potatoes.

    Step 3 - Add other ingredients -

Now add non-dairy milk (almond milk), salt, and black pepper to the mashed potatoes. Crush the roasted garlic pods and add it to the bowl of potatoes. Also, add 2 tbsp olive oil to the potatoes now and give them all a nice stir. Garnish with freshly chopped parsley or cilantro leaves and drizzle some more olive oil with a hint of chili flakes. Awesome combination indeed.

Note - To make roasted garlic -

Take the garlic head and cut off the top portion. Rub the garlic head with olive oil and wrap it with foil. Now place it in the oven at 400F for 40 - 45 minutes. Remove from oven, squeeze out the garlic pulp and discard the skins.
