Mashed potatoes are a popular side dish perfect for Thanksgiving, Christmas, Easter, or any party or get-together.ย They are creamy and buttery. Traditional mashed potatoes have lots of butter and heavy cream added to them, which ultimately makes them fluffy and yummy.
However, this vegan mashed potato is fluffy, too,ย and it is dairy-free. I have added minced garlic to these mashed potatoes for a garlicky flavor. This simple recipe is free from any fat like cream or butter, and hence, it is a healthy recipe as well.

Potatoes are more carb when they are fried than those when steamed, boiled, or roasted. So the boiled potatoes of this dish have fewer carbs (as compared to fried potatoes) and more protein, fiber, and other nutrients. Read my other vegan potato recipes here.
How to make vegan mashed potatoes?
This is an easy and simple side dish that takes less than 30 minutes for a large batch size. Just boil the potatoes, mash, and mix simple ingredients. But make sure to mash potatoes nicely. Use a cheese grater or potato masher for uniformity. I prefer my potato masher for this.
Ingredients -
Potatoes: Yukon gold potatoes or starchy russet potatoes work best for the recipe. Yukon gold yields perfect, creamy, and buttery mashed potatoes and is better than russet potatoes. However, many prefer russet potatoes for this recipe. You can also use a mix of them.
Garlic:ย It adds a strong garlicky flavor
Salt & pepper: Salt and pepper are the essential ingredients and the only spices we are using here.
Non-dairy milk: I have used unsweetened almond milk to add to the mashed potatoes. You can also add oat milk, soy milk, or other plant milk.
Olive oil: add extra virgin olive oil to the mashed potatoes.
Fresh Herbs: Add freshly chopped parsley, cilantro, or chives to the mashed potatoes and garnish with them.
Chilli / Spice: If you want it a little spicy, add chili flakes or a pinch of paprika.
Instructions To Make Vegan Mashed Potatoes
Step 1 - Boil Potatoes -
Peel the potatoes and dice them into quarters. Immerse the potatoes in a bowl of water in a pot and boil until tender and cooked well. Once cooked, remove from heat and strain out using a colander. Let it air-dry and cool naturally for some time.
Step 2 - Mash the potatoes -
Now when potatoes are cooled down, mash them completely using a potato masher or a grater. give them a nice stir ensuring proper mashing of potatoes.
Step 3 - Add other ingredients -
Now add non-dairy milk (almond milk), salt, and black pepper to the mashed potatoes. Crush the roasted garlic and add them to the bowl of potatoes. Also, add 2 tbsp olive oil to the potatoes now and give them all a nice stir. Garnish with freshly chopped parsley or cilantro leaves and drizzle some more olive oil with a hint of chili flakes. Awesome combination indeed.
Note - To make roasted garlic -
Take the garlic head and cut off the top portion. Rub the garlic head with olive oil and wrap it with foil. Now place it in the oven at 400F for 40 - 45 minutes. Remove from oven, squeeze out the garlic pulp, and discard the skins.

Ingredients
- 1 ยฝ pounds potatoes peeled & quartered
- 1 cup almond milk (240 ml or more as required)
- 3 tbsp olive oil (extra virgin) or vegan butter
- 2 large garlic pods roasted and minced
- 1 tsp salt
- ยฝ tsp black pepper
- parsley or cilantro leaves garnish
- 1 tsp chilli flakes optional
Instructions
- Take water in a large pot or dutch oven.
- Clean and peel the skin of potatoes.
- Dice them into quarters and immerse inside the pot.
- Place the pot on stovetop and let it boil.
- Cook for 15 - 20 minutes o till potatoes are cooked tender.
- Once done, remove the potatoes from hot water using a colander.
- Letit cool down for 10- 15 minutes.
- Now with help of a potato masher, mash the potatoesnicely.
- Transfer the mashed potatoes to a large mixing bowl.
- Add almond milk, salt, pepper, minced garlic, olive oil to the potatoes.
- Mix them all nicely.
- Taste and adjust salt if required.
- Garnish with freshly chopped parsley or cilantro leaves
- Drizzle some more olive oil and some chilli flakes for a spicy hint.
