    Green Beans Almondine is an easy and basic french bean recipe. This is a healthy dish to serve as a side or as your low-carb snack.

    French beans or green beans are zero in carbs and fat and high in protein as well as fiber. That's why this is one of the best vegetables for a weight loss diet.

    If you are following a low-carb diet or keto diet, you may trust this amazing green beans almondine.

    This is a great snack and delicious side dish for everyday meals or special occasions e.g. holiday dinners/ holiday menus. It fits into every frame so well. This is a perfect side dish.

    What is Green Beans Almondine?

    If you are wondering "what is green beans almondine?", this is sauteed green beans with toppings of almonds. Almondine is a culinary term used for almond dressing. This is a French dish originally.

    This is a healthy side dish. If you are on a keto diet, this will be a great meal or main dish for a busy night of the week. It's an elegant, simple, and tasty side dish. It's made with simple ingredients and a few minutes only.

    Adding crispy slivered almonds compliments the tender sauteed beans and adds a nice crunch and nutty flavor to the beans. You can also add sauteed shallots to the beans for extra flavor.

    Green Beans/ String Beans

    Green Beans are often referred to as snap beans or string beans.

    Fresh green beans are a high source of protein for vegetarians. And because of the high protein factor, you will not crave any food for long hours. So this helps in losing that extra weight.

    It's always been a great food or vegetable to add to your diet. The protein component helps in building muscle mass or say prevents loss of muscle mass during the process of fat & calorie burning.

    Sauteed Green Beans with Almonds

    It's an easy recipe where soft and perfectly cooked green beans are tossed with crispy toasted almondine to make a perfect and easy side dish or snack.

    On top of it, the crunchy toasted almonds complete the recipe. It's simple yet so full of flavors. You can toast the almond slices on a skillet or in the oven. Here I have toasted this in a small tsp of olive oil just before sauteing the green beans.

    Ingredients

    Green beans - regular green beans / French green beans or string green beans

    Almonds - Slivered almonds

    Olive oil - or vegan butter

    Garlic - minced or garlic powder

    Ice - or cold water

    Salt & Pepper

    How To Make Green Beans Almondine?

    Let's divide the cooking process into 4 steps:

    1. Blanch the beans
    2. Ice bath beans
    3. Toast almonds
    4. Saute beans with garlic

    This is a simple green bean recipe that is easy and hardly takes 15 minutes to cook. Also, it doesn't take much pain for prepping. Just cut off the top and bottom ends. All done.

    Blanch the beans (3 Min + 2 min in Ice water)

    Now before blanching, wash off thoroughly and trim the head and tail parts. Now blanch beans in water for 3 minutes.

    Ice Bath The Beans

    After that just remove the beans from the hot water with help of a tong or pass it through a colander. Then take a bowl of ice water and immerse the blanched beans in ice-cold water for 2 minutes. This will help in retaining the bright green color of the beans and also helps stop overcooking. Now remove the beans and pat dry with a paper towel.

    Toast Slivered Almonds (20 - 30 sec)

    In a dry skillet or frying pan, heat a spoon full of olive oil or any vegetable oil on medium heat.

    Now saute sliced almonds for 20 - 30 seconds till it starts changing color to a golden brown.

    Don't overbrown the almonds. Toast on medium-low flame. Once done transfer to a clean bowl.

    Saute beans with garlic (4 - 5 Min)

    Now in the same oil add chopped or minced fresh garlic and saute for 10 - 15 seconds on medium-low heat till it becomes fragrant and starts changing color slightly.

    Add blanched beans to the pan. Add salt and black pepper to taste. You may add some red pepper flakes to the beans to make it spicy. Add a little water (2 tbsp) to coat it all nicely. On medium flame saute for 3 - 5 minutes. Don't overcook as we need tender-crisp textures and not soggy ones. Keep stirring in between.

    Remove from skillet and transfer to a plate. Add toasted almonds on top of it. Drizzle a squeeze of fresh lemon juice. Your delicious Green Beans Almondine is ready in a cook time of 10 - 15 minutes only.

    Equipment

    • Frying Pan
    • Mixing Bowl
    • Colander
    • Spatula

    Ingredients
      

    • 200 gms Fresh Green Beans
    • 1/4 cup Almonds (silvered)
    • 3 Garlic Pods (finely mince)
    • 1 tsp Sesame Seeds (dry roasted)
    • 1 tbsp Oil or olive oil
    • Salt to taste
    • 1/2 tsp Black pepper

    Instructions
     

    Prepping & blanching

    • Wash and clean beans thoroughly.
    • Trim both the ends.
    • Now in a saucepan heat water to boiling. add a pinch of salt to it.
    • Blanch trimmed beans in hot water for 2 minutes.
    • Remove from hot water to a strainer or colander.
    • In a bowl take ice water and immerse blanched beans in it.
    • This will stop the overcooking of beans and retain its green color.
    • After 2 - 3 minutes remove beans from ice water and wipe it with a clean towel.

    Toast Almonds

    • Now in a skillet or pan, heat oil.
    • Add in slivered almonds and roast for 30 - 40 seconds or till it starts changing color.
    • Then remove to a clean bowl for further use.

    Saute beans and garlic

    • In the same skillet, add finely chopped garlic and on a low flame saute for 15 - 20 seconds or till it starts to change color.
    • Now add blanched beans into the skillet
    • Add a little salt (to taste) and black pepper. Add red pepper flakes or chilli flakes.
    • On a medium flame keep sauteing for 3 - 4 minutes.
    • Don't overcook the beans as the texture we need tender-crisp. Not soggy ones.
    • Remove from heat and serve on a plate.
    • Place toasted almonds on top of it.
    • Sprinkle some herbs or finely chopped cilantro leaves to garnish.
    • Serve hot with any main course of choice.

    Notes

    Don't over cook beans and keep the texture tender and crisp.
    Wash with ice water immediately after you blanch the beans.
    Use garlic generously for flavor.
