    Instant Rabdi Recipe | Rabri with Condensed Milk

    Instant Rabdi Recipe | Rabri with Condensed Milk

    Rabdi is one of the best desserts in the list of Indian desserts. This is basically a sweet thickened milk. Traditionally it is made by reducing the milk with continuous simmering for hours (on low flame probably). This instant rabdi or rabri is just a quick solution.

    This instant rabdi is made in less than 15 - 20 minutes in comparison to 1 hr in an authentic method wherein milk is reduced to 1/4th of quantity.

    Other than this quick rabdi, I love lachcha rabdi as well. This is a much lengthier process than making rabri with condensed milk. In this rabri, the top layer of malai is stored at sides of the pan while simmering. And in the end, it's added to the reduced milk. This increases the richness and brings in texture.

    You can also use some thickening agent like cornstarch. But I don't add anything. Some also add dry fruits powder to give this a thick texture. Also, khoya is a great addition if you are looking for a quick rabdi but with that authentic flavor. Because khoya or mawa is nothing but evaporated milk (next stage of rabdi).

    What is Rabdi or Rabri?

    Rabdi or rabri is an Indian dessert. This is nothing but sweetened reduced milk. The milk gets richer and thicker by the process of reducing. Normally if you are making it in a traditional way you have to simmer it for a good 1 hour to get 1/4th of reduced milk. Add sugar, few strands of saffron and dry fruits of choice.

    How to make Instant Rabdi or Rabri with Condensed milk?

    This is one of the simplest and quickest rabdi desserts. Simmer milk (2 liters) in a wide mouth pan. Stir occasionally. Now when milk id reduced to 1/2 then add 1 can (200ml) condensed milk (milkmaid). No need to add sugar as milkmaid has a natural sweetness. This takes no more than 15 - 20 minutes. Garnish with dry fruits.

    Tips to Make Perfect Rabdi

    1. Always use a heavy bottom pan.
    2. Use a wider pan as it helps in quicken the process.
    3. Always use full-fat milk for this recipe. Cow milk can result in a less rich and little saltier result as it has natural salt in it (from experience).
    4. You can also use dry fruits powder to give it a richer texture.

    Ingredients
      

    • 1.5 ltr full cream milk
    • 200 ml sweetened condensed milk (milkmaid)
    • 1/4 cup chopped dry fruits
    • 4 - 6 saffron strands

    Instructions
     

    • Heat milk in a wide pan.
    • Simmer till it reduced to 1/3rd.
    • Then add condensed milk, saffron, and dry fruits.
    • Simmer for another 10 minutes or it reaches desired consistency.
    • Garnish with some more dry fruits and serve hot or cold as per your taste.
