Rabdi is one of the most popular desserts in India. This instant rabdi can be made in less than 15 minutes using condensed milk. It is a quick and delicious dessert indeed.
Instant Rabdi Recipe
Rabdi is one of the best desserts on the list of Indian desserts. This is basically a sweet and thickened milk. Traditionally, it is made by reducing the milk by continuously simmering for hours (on low heat). This instant rabdi or rabri is just a quick solution to the long timetaking process of rabdi.
This instant rabdi is made in less than 15 - 20 minutes, compared to 1 hr in an authentic method, wherein the milk is reduced to 1/4th of the quantity.
Instant Rabdi Vs Laccha Rabdi
Other than this quick instant rabdi, I love laccha rabdi as well. This is a much lengthier process than making rabri with condensed milk. In this rabri, the top layer of malai is stored at the sides of the pan while simmering. And in the end, it's added to the reduced milk. This increases the richness and brings in texture.
You can also use thickening agents like cornstarch, but I don't add anything. Some also add dry fruit powder to give this a thick texture. Also, khoya is an excellent addition to a quick rabdi with that authentic flavor because khoya or mawa is nothing but evaporated milk.
What is Rabdi or Rabri?
Rabdi or rabri is an Indian dessert. This is nothing but sweetened reduced milk. The milk gets richer and thicker by the process of reducing. If you make it traditionally, you must simmer it for 1 hour to get 1/4th of the reduced milk. Add sugar, a few strands of saffron, and dry fruits of choice.
How do you make instant Rabdi with condensed milk?
This is one of the simplest and quickest rabdi desserts. Simmer milk (2 liters) in a wide-mouth pan. Stir occasionally. When milk is reduced to 1/2, add 1 can (200ml) of condensed milk (milkmaid). There is no need to add sugar, as condensed milk has a natural sweetness. This takes no more than 15 - 20 minutes. Garnish with dry fruits.
Tips to Make Perfect Rabdi
- Always use a heavy bottom pan.
- Use a wider pan as it helps quicken the process.
- Always use full-fat milk for this recipe. Cow milk will not be appropriate and a little saltier as it has natural salt (from experience).
- You can also use dry fruit powder to give it a richer texture.
