Instant Pot Cilantro Lime Rice is easy and quick instant pot rice for lunch or dinner. This 5-minute cilantro lime rice is vegan and gluten-free.

And this cilantro lime rice is perfect to add to your burrito bowl or any meal. You can also make thisย cilantro lime riceย on theย stovetop, but that is a little more time-consuming than theย instant pot method.
This instant pot cilantro lime rice is naturally vegan unless you are adding any butter to the rice. Make this oil-free, or add a little olive oil to the rice. But again, that is optional in this cilantro lime rice. Also, this is gluten-free too.
The name talks all about this dish. Cilantro lime rice is steamed rice with the added flavor of lime and the freshness of many fresh cilantro herbs. This is the base of many burritos or burrito bowls. Lime and zest bring that fresh citric flavor to the rice. I love this cilantro lime rice with sauteed spinach and tomatoes.

Ingredients you will need:-
Rice -ย Any long-grain rice like basmati rice since long-grain rice will hold the shape well.
Lime - Lime adds a freshness and citric flavor
Lime zest -ย Zest of 1 lime and lime juice add extra concentrated flavor. To remove the zest, grate the lime with fine holes in the box grater. Make sure to remove only the colored part.
Cilantro leaves - Take a lot of finely chopped fresh cilantro leaves.
Olive Oil - take extra virgin olive oil. You can add that before closing the instant pot lid or after the rice is fluffed.
Salt - salt to taste
Substitutes - Substitute lime juice and lime zest with lemon juice.
How to make Cilantro Lime Rice in Instant Pot?
Rinse the rice thoroughly. Dump the rice into the inner pot with water, salt, oil, lime zest, and lime juice.
Close the lid of the instant pot and move the knob to "SEALING." Start the instant pot on manual pressure cooker mode. Set time to 4 minutes at HIGH pressure. Once it beeps, let it be at NPR for 10 minutes. Then QUICK RELEASE the rest. Open the lid. Fluff the rice using a spoon or laddle. Now add lots of fresh cilantro leaves finely chopped. Gently mix them all. Cilantro lime rice is ready to serve.
Note: You can also use the "RICE" mode of the instant pot to auto-set time and pressure. This usually takes 12 minutes.
The ratio of rice to water in an instant pot rice:-
Add 1 cup water for 1 cup white rice when cooking on PRESSURE COOK mode. Though different varieties of rice may require a little more or less water. White basmati rice takes the same quantity of water, while long grains may take ยผ cup more water.
Also, the timing and water quantity will vary if you try this with brown rice. 2 cups of brown rice will need 2 ยผ cups of water. And the cooking time will be 10 minutes.
Note - The instant pot takes 8 - 10 minutes to come to pressure. Also, the time will be the same even if the recipe is doubled or tripled.
How to store & reheat?
This rice stays in the refrigerator for up to 5 days when appropriately closed in an air-tight container. In the freezer, it stays good for 3 months.

- Fluff the rice using a spoon or fork.
- Now add lots of fresh cilantro leaves finely chopped.
- Gently mix them all.
