What is almond milk?
Almond milk is one of the dairy-free alternatives for milk, derived from almond nuts. It doesn't taste very nutty though it's derived from nuts. It has a mild nutty flavor. However, if you are allergic to nuts, you can find alternative dairy options like soy milk, coconut milk, hemp milk, etc.
It's a nutritious substitute for dairy. It's low in calories and beneficial for human health. However, since the almond milk is made with blanched almonds and has been watered down, it has relatively less fiber and antioxidants as compared to the nuts themselves. Almond Milk Pancakes
Almond milk pancakes are really soft, fluffy pancakes that don't require almond flour to make pancakes.
How to make almond milk pancakes?
Ingredients
All-purpose flour - This will make a fluffy and light pancake. You can also consider self-rising flour. However, you can take the flour as per your diet preference.
Unsweetened almond milk - You may add a plain neutral or almond flavor. For chocolate-flavored pancakes, you may add chocolate-flavored almond milk as well. make sure the milk is unsweetened.
Baking powder - It will help make the batter airy and the pancakes light and fluffy.
Vanilla essence - This adds a nice flavor to the pancakes.
Pinch of salt - to balance the flavors or sweetness
Powdered sugar - I find this the easiest option. You may add any other sweetener too.
Oil/ vegan butter - Any neutral-tasting oil or vegan butter
Toppings of Choice - Take any of your favorite toppings like chopped fruits, whipped cream, or plain banana with some drizzle of maple syrup, chocolate syrup, strawberry compote, or any berry compote, etc. The list is vast in fact.
Method Instructions
In a mixing bowl add flour, baking powder, salt, & sugar. Pour in almond milk and vanilla extract. Whisk everything to a smooth thick batter. Let it sit for 3 - 4 minutes.
Grease a skillet or pan with cooking oil or vegan butter. Once hot pour 1/4 cup of batter onto the pan. And don't spread it with a spatula. Let it flow naturally. Let it cook for 2 - 3 minutes before flipping it to the other side. Cook the other side for 2 minutes.
Remove once done. Drizzle some maple syrup or your favorite toppings. Almond milk pancakes are ready.

Ingredients
- 1 cup flour
- 1 cup almond milk
- 2 tsp baking powder
- 1 tbsp granulated sugar
- 1 tbsp vegetable oil
- 1 pinch salt
Instructions
- In a mixing bowl, add together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the almond milk, vegetable oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Heat a non-stick skillet or griddle over medium heat.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles appear on the surface of the pancake and the edges begin to look set, about 2-3 minutes.
- Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.
- Repeat for all pancakes.
- Serve hot with drizzle of maple syrup, or any other favorite toppings like fresh fruit, or a dollop of vegan butter, vegan whipped cream, etc.
