    Green Beans and Potatoes

    Green beans and potatoes stir fry is an easy side or mains for your lunch or dinner. These green beans and potatoes are naturally vegan, gluten-free, and plant-based sides.

    I love this dish because it is simple, delicious, and healthy. This stir fry is perfect for a quick weeknight meal. These green beans and potatoes are cooked in a little bit of oil and a few more spices. You can easily make them in a skillet or roast in the oven, it's extremely easy, yet delicious.

    You can keep the seasoning simple with salt, pepper, and garlic powder. Or you may add in some other spices if you want. Then the stir fry is served over rice or noodles. It goes well with any kind of bread or flatbread as well.

    This quick and easy stir fry is perfect for a busy weeknight. The combo of potatoes and green beans is healthy and delicious in taste. Potato is a great vegetable to add to many other vegetables like cauliflower, cabbage, spinach, etc.

    Ingredients You Will Need:-

    Potatoes - You can use any type of potato you like, I used white potatoes but Yukon gold or red would be good too. Even the fingerling potatoes or the baby potatoes are great too.

    Green Beans - Organic green beans are the ones I love because of their texture and natural tenderness.

    Oil - Olive oil or canola oil for sauteing or baking whatever method of cooking you choose.

    Onion & Garlic - I love to add fresh onion and garlic while making on the skillet, whereas for baking, substitute this with onion powder and garlic powder.

    Spices - You can play around with spices. keep it simple with salt and pepper. Or add a spice mix of your choice. Here I have taken ground coriander, turmeric powder, ground cumin, red chili powder, and paprika.

    Alternative Spices -

    • For curry flavor - add curry powder.
    • For Italian flavor - add a mix of dried herbs like oregano, basil, parsley, etc.
    • Mexican Flavor- add cumin powder, smoked paprika, and oregano. or taco spice mix
    • For Indian flavor- add coriander powder, cumin powder, turmeric powder, and red chili powder.

    How to make green beans and potatoes?

    You can make the potatoes and green beans in the skillet or just bake them in the oven. You can air fry them also. But I love the skillet ones on the stovetop. However, I have given both methods in this post.

    Rinse and clean the vegetables. Peel off the potato skins. Dice it into the desired size. Similarly, remove the end parts of the beans and chop them into 2 - 3 cm pieces. Slice onions and mince the garlic. Add garlic generously to the potatoes and green beans stir fry. This adds a ton of fresh flavor to the dish. You can skip onions or add them as per your choice.

    Heat oil in a skillet. Once the oil is hot, add chopped onions and garlic and saute till translucent. Add diced potatoes and a pinch of salt. Cover with a lid and let it cook on low flame for 4 - 5 minutes or till potatoes are 50% done.

    Then add the chopped green beans and add the rest salt, other spices like turmeric powder, coriander powder, cumin powder, red chili powder, and black pepper powder. Give them a nice gentle stir and again cover them with a lid. Cook for another 5 minutes till cooked nice and tender. Check the doneness with help of a fork. Turn it off once it's done.

    Leftover and Storage

    You can refrigerate the leftover in an air-tight container. For 4 - 5 days it stays good. Beyond that, you might notice a change in flavor. To reheat, transfer the content to a microwavable dish and microwave at 900W for 1 minute or till it becomes hot enough. Or transfer to a skillet and stir until warm as required.

    Green Beans and Potatoes - In oven

    You can also roast the green beans and potatoes in the oven. To roast them in the oven clean and dice the green beans and potatoes into desired pieces.

    Place the diced potatoes and green beans in 2 separate mixing bowls. Add seasonings (along with a tsp of olive oil) to both of them.

    Preheat the oven to 400 F. Spread the seasoned potatoes evenly on the baking tray.

    Bake them for 15 minutes. Remove and now add seasoned green beans to the tray. Flip the potato chunks. Now return the baking tray to the oven for further cooking. Bake for another 20 - 25 minutes or till the veggies are cooked through.

    Once done, remove from the tray and serve hot.

    This is easy to make ahead of and store in the refrigerator. Just reheat in the oven, microwave, or in a skillet.

    Ingredients
      

    • 2 tbsp oil any neutral tasting
    • 1 lb potatoes peeled & diced
    • 1/2 lb green beans trimmed & diced
    • 1 small onion chopped
    • 2 - 3 large garlic cloves minced/ or 1 tsp garlic powder
    • 2 tsp ground coriander
    • 1/2 tsp ground cumin
    • 1/2 tsp paprika
    • 1/2 tsp cayenne pepper
    • salt and pepper as taste
    • 1 tsp oregano

    Alternatively

    • 2 tsp taco seasoning
    • 2 tsp oregano
    • 1 tsp black pepper
    • 1 tsp garlic powder or minced fresh garlic

    Instructions

    Serving Ideas -
    It goes best with rice and dahl, with flatbreads. Can add to the tacos as well. This goes well with almost all main courses.
