    Lauki Chana Dal

    Lauki chana dal is a delicious dal flavored with excellent, flavorful spices. This dal is vegan and gluten-free as well.

    Lauki Chana Dal

    Lauki chana dal ki sabzi, aka bottle gourd and lentil, is a healthy dish with curried flavors. Bottle gourd is a high source of dietary fiber, and lentils are one of the richest protein sources. So you will get high fiber and high protein.

    Lentils have a special place in Indian cuisine. It's a versatile item; it can be used in every dish you make. This curry-flavored dal is made with chana dal, aka Bengal gram lentils. Serve this with rice, roti, paratha, etc.

    How to make lauki chana dal?

    Ingredients

    Chana dal - Bengal gram lentils

    Lauki (bottle gourd) - peeled and diced

    Onions, tomato, ginger, garlic, green chilies

    Spices - cumin seeds, coriander powder, cumin powder, turmeric powder, red chili powder, garam masala, salt, and hing

    Garnish - coriander leaves and lemon juice

    Instructions

    In Manual Pressure Cooker On The Stovetop

    • Soak dal for 20 minutes. This will help reduce cooking time.
    • In a pressure cooker, heat oil. Add cumin seeds and asafoetida. Let them splutter.
    • Add finely chopped ginger and garlic. Saute for 10 - 15 seconds.
    • Add chopped onions and saute until translucent (2 - 3 minutes).
    • Then add the spices and mix them well.
    • Add diced tomatoes and saute for 2 minutes on medium to low heat.
    • Add chopped bottle gourd and chana dal.
    • Then, pour some water into the cooker for 10 - 15 minutes or 6 - 7 whistles.
    • Add some freshly chopped coriander leaves and squeeze some fresh lemon.
    • Stir everything well, and lauki chana dal is ready to serve

    Lauki chana dal in an instant pot

    You can make this dish in the instant pot. Follow these steps to make this in an instant pot.

    • Soak the dal for 20 minutes.
    • Start the instant pot on saute mode. Once the pot is hot enough, add oil, followed by cumin seeds and hing.
    • Add ginger and garlic. Saute for 15 - 20 seconds, and then add onions. Saute onion till translucent.
    • Add diced tomatoes and saute them until they are soft and cooked.
    • Then add the spices and salt. Stir to mix everything.
    • Add diced lauki and lentils. Mix them all.
    • Pour water and deglaze the pot before closing the lid.
    • Close the lid and set the temperature to manual at high pressure for 10 minutes.
    • Wait for the pressure to release naturally for 10 minutes, then manually release the rest. Then, open the lid by releasing the pressure valve.
    • Add diced coriander leaves and a dash of lemon juice freshly squeezed.

    Equipment

    • 1 Pressure Cooker or instant pot
    • 1 Spatula

    Ingredients
      

    • 1 small Lauki 4 - 5 cup diced
    • 1 cup bengal gram soak them for 15 - 20 minutes
    • 1 onion chopped
    • 1 tomato chopped
    • 1 green chilli diced
    • 5 - 6 garlic pods minced
    • ยฝ inch ginger minced
    • 1 tsp cumin seeds
    • 2 tsp coriander powder
    • ยฝ tsp cumin powder
    • 1 tsp red chilli powder
    • ยฝ tsp turmeric powder
    • ยฝ tsp garam masala or 1 tsp curry masala
    • 1 tsp salt or as per taste
    • 3 tbsp mustard oil or any vegetable oil
    • 1 tbsp lemon juice
    • 5 - 6 tbsp fresh coriander leaves finely chopped

    Instructions
     

    • Heat oil in a pressure cooker.
    • Add a generous pinch of asafoetida or hing.
    • Add cumin seeds and let it crackle.
    • Add chopped ginger and garlic and saute for 30 seconds.
    • Then add chopped onion and saute till translucent.
    • Add chopped tomatoes and cook for 1 minute more.
    • Add all dry spices and mix well. Saute for 1 minute on medium flame.
    • Add in chopped lauki and soaked lentils. Add in salt and mix well.
    • Add 1 - 1.5 cups of water and cook on medium heat for six (6) whistles. You can adjust the water as per the thickness you want.
    • Turn off the gas and let the pressure release naturally.
    • Once the pressure is released, open the lid of the cooker.
    • Add garam masala and give it a good stir.
    • Add lemon juice & chopped coriander leaves. Serve hot with roti or rice.

    • Start the instant pot on saute mode.
    • Once the pot is hot enough, add oil, followed by cumin seeds and hing.
    • Add ginger and garlic. Saute for 15 - 20 seconds, and then add onions.
    • Saute onion till translucent.
    • Add diced tomatoes and saute them until they are soft and cooked.
    • Then add the spices and salt. Stir to mix everything.
    • Add diced lauki and lentils. Mix them all.
    • Pour 1 cup water and deglaze the pot before closing the lid.
    • Close the lid and set temperature to manual at high-pressure for 10 minutes.
    • Wait for the pressure to release naturally for 10 minutes, and then manually release the rest of the pressure.
    • Open the lid by releasing the pressure valve.
    • Add diced coriander leaves and a dash of lemon juice freshly squeezed.

    Notes

    Bring the mustard oil to the smoking point and then cool down to average temperature before adding anything to it. If you are using any other oil, ignore this step and add ingredients when oil is hot. Keep temperature medium to low.
